The historical story of the cup test? How did the cup testing system come into being?
How on earth did the cup test come about? In 1974, Ms. Erna Knutsen, the godmother of boutique coffee, coined the term boutique coffee. According to her definition of boutique coffee, beans will have a unique flavor according to the planting region, environment and climate. Then in 1982, the American Fine Coffee Association (SCAA) was established, but the cup testing system had not yet been established. as a result, the definition of boutique coffee was controversial at that time, because everyone had different subjective perceptions of boutique.

Not until 2009, when SCAA created a systematic cup testing method, did boutique coffee have an objective and fair definition. Coffee evaluated according to the SCAA cup test criteria, more than 80 points are fine coffee, as shown in the table below.

The higher the score, the better the boutique coffee? The answer is not necessarily, because this has to return to people's subjectivity, everyone likes different flavor of coffee, of course, the definition of delicious is also different, but it can be affirmed in terms of quality. SCAA's cup testing system is not perfect, but it is already the most detailed and meticulous system.
With the establishment of cup testing system, high-quality coffee beans are no longer like ordinary bulk materials, with cost as all transaction conditions, but with high-quality terms, providing another trading channel for coffee farmers, which can better encourage coffee farmers to improve their coffee quality.
In 2009, Mr. Li Gaoming, a coffee farmer in Alishan, Taiwan, took part in SCAA's annual coffee cup test, scoring 83.5 points. When he entered the competition again in 2012, the score of coffee beans exceeded 85.67 points. Although the amount of coffee in Taiwan is small and the price is high, the high quality makes Taiwan's coffee comparable to world-class manor coffee.
Since its invention in 1995, the flavor wheel has been one of the important materials for the coffee industry, providing a scientific communication channel for the coffee industry.
