What is grass-fed cream? Why do people on a ketogenic diet keep emphasizing the need to eat grass-fed cream?

"grass-fed cream" is the cream made from the milk they produce from cows that feed on grass. Dave Asprey, the founder of bulletproof coffee (Bulletproof Coffee), is a well-known advocate of eating grass-fed cream. He believes that cream has been stigmatized for decades, and good cream has many health benefits, so add salt-free grass-fed cream to bulletproof coffee.

Because of the common habit of eating beef in Europe and the United States, there are a lot of related studies on whether cattle should be fed cereal or forage, grazing or captivity. There are many research reports that are fresh and interesting when looking at these studies:)

However, before we begin, I would also like to remind you that in Europe, there is no standard definition of the name "grass feeding". How much grass you eat in a day and how much grass you eat for several days of the year are marked by dairy farmers themselves and are not regulated by law.

And to tell you the truth, seriously, many complex factors will affect cattle, and climate change will also affect cattle in different areas and years of breeding, while there is a big temperature difference between Europe and the United States in the four seasons, and milk in summer is different from milk in winter. Because of changes in the lifestyle of cattle, there is also a great difference in meat quality and milk composition. Almost every study has mentioned this statistical problem.

What's the difference between grass-eating and cereal-eating cattle?

American research has found that the meat quality of grass-eating cattle is really different from that of grain-eating cattle. Grass contains a lot of fiber, requires a long period of chewing, and consumes a lot of calories more quickly than grain-eating cattle, both of which are different in many parts.

Grass-fed cattle have a low proportion of fat and high precursors of vitamin An and vitamin E. Omega-3 and conjugated linoleic acid, which is very beneficial to the human body, are also high in grass-fed cattle, although they have the same content of saturated fatty acids. Grass-fed cattle do not cause a rise in cholesterol compared with grain-fed cattle.

However, when it comes to softness and taste after cooking, grain-fed cattle win, which is why many Americans still insist on eating grain-fed cattle.

After a careful analysis of the genomes of cattle fed by the two methods, scholars found that there were 342 differences in the genomes, which could explain the differences in nutrition and taste.

Is grass-fed cream really better than other cream?

Organic cream seems to be better, but the location of grass-fed cream is unknown.

In a study in the Netherlands, 54 different brands of cream available on the market were divided into three groups: traditional cream and organic cream (EU regulations allow cattle to move freely, and 60% of the food is chaff. Do not use drugs, antibiotics, hormones) and grass-fed cream (there is no clear legal regulation in the European Union, manufacturers label), the three groups compare the nutritional composition.

Fat: traditional cream has a small proportion of fat, but the amount of fat is greatly affected by the season.

Fatty acids: according to the statistical results, 18 kinds of fatty acids in organic cream are different from traditional cream, only 3 kinds of fatty acids in grass-fed cream are different from traditional cream, and there is no significant difference in fatty acids between organic cream and grass-fed cream. On the whole, the characteristics of grass-fed cream are not clear. It is true that the content of omega 3 in grass-fed cream is higher than that of traditional ones.

Grass-fed cream is not very clear from the analysis of its fatty acid characteristics, and it may also have something to do with the looser definition of grass-fed cream, which is not as clear as traditional cream and organic cream.

To put it simply, according to the results of this study, organic cream is indeed better than traditional cream, and scientists also have a foggy view of the properties of straw-fed cream.

Who is better after all? Scientists have limited knowledge.

Another study, which collected 113 barrels of milk from 30 farms in the Netherlands, analyzed the differences in fatty acid composition of milk from cattle fed fresh pasture, grazed cattle and organically farmed cattle.

The conclusion is that there is a difference between grazing and non-grazing, there is a difference between grazing and captive grazing, but there is no difference between grazing and captive grazing, and what is more disappointing is that in this study, there was no significant difference in fatty acid composition between organic cattle and conventionally raised cattle.

This result will certainly frustrate believers in organic farming, but it is understandable that the factors that affect the composition of milk are so complex that ordinary consumers like us do not have to delve too hard into the time and space background behind cream.

What cream brands do you recommend?

There are many brands on the market, sort out a few famous brands, as well as the approximate price that can be found on the Internet, and share the experience I have eaten.

Anjia Anchor:500g 13000,140 yuan | New Zealand | Volkswagen affordable brand, easy to sell in all channels, with heavy milk flavor

Salt-free cream: RMB 400,500 for 1.81kg | USA | Costco has its own brand, suitable for families with high consumption

President brand President:500g 18000200 | France | medium price

Ishini Isigny:500g 190,0210 CNY | France | medium price, AOP origin limit certification

Iron Tower Elle & Vire:500g 170,190 CNY | France | medium price

Lansco LESCURE:250g 13000160CNY | France | medium price, AOP origin limited certification

Ash ECHIRE:80g 80 CNY | France | Lady class, AOP origin limit certification

Berdier Le Beurre Bordier:125g RMB235 | France | Lady level

In fact, the definition of "organic" in the United States is also very loose, so it is very simple for cream manufacturers to mark their products with the word "organic". Summing up the above research results, only organic cream is obviously better than traditional cream. and only European organic cream is more credible. I don't think grass-fed cream is that important. It's better to choose a medium-to-high-priced brand and drink your favorite coffee and cream. It's hard to describe how refreshing you feel.
