Kopi Luwak is made by civets or masked palm civet after eating the coffee fruit, the coffee beans are not digested and discharged, and then the coffee beans in their feces are extracted and processed. Kopi Luwak first originated in Indonesia. In the early 18th century, the Dutch built coffee plantations in Sumatra and Java. Indonesian locals inadvertently found that civets love this kind of coffee fruit and drain the beans intact. After the coffee beans are fermented in the civets' stomach, the coffee tastes better than normal, and then this kind of coffee is famous. But the output of this kind of coffee is very low, so the price is very high.
Baoshan, Yunnan Province, is a relatively early region in the production of Kopi Luwak in China, because there are no civets in China, and the cost of introduction is relatively high. There is less coffee made by civet shit here, while there are many masked palm civet in Yunnan, so most of them make Kopi Luwak through masked palm civet.
These masked palm civet are raised in the greenhouse, three or four a room, the room is very clean, breeders must be sterilized to enter the greenhouse. They like to choose the most mature and sweet, juicy coffee fruits as food, and usually eat some fruits such as bananas, dragon fruits and so on. These coffee fruits ferment in the stomach, destroying the protein of coffee beans, producing short peptides and free amino acids, reducing the bitterness of coffee. After it is discharged from the body, it should be dried in the sun.

At present, the planting area of Baoshan coffee in Baoshan City has reached more than 190000 mu, with the largest planting area in Longyang District, which is concentrated in Lujiangba and Mangkuan Township. There are dozens of coffee enterprises, some mainly processing raw materials, some mainly finishing, the quality of which is getting better and better, and brand awareness has been significantly improved, especially the products of finishing enterprises are exported to Europe and the United States, Arab and other countries.
