Nicaraguan Coffee Bean-Picona Farm La Picona Malakadura Experimental batch

Finca La Picona Farm (Picona) is located in Dipilto, Nova Seagovia, the northernmost part of Nicaragua, covering an area of less than 5 hectares and 1300 meters above sea level, overlooking Honduras because it is on the border between Nicaragua and Honduras. The farm has a very unique microclimate in the nature conservation area. Farmer Olga Marina Gonzalez Cuadra lives on the farm with her husband and son's family, and her husband also has his own farm.

Ms. ou GE, the farmer, bought Picona 12 years ago. In addition to 5 hectares of coffee, the other 5 hectares is a nature conservation area, where all kinds of animals and plants thrive. The farm has only one variety, Maracaturra, which is native to the farm, and the coffee growing area is mixed with other plants, including bananas, oranges, plums, mangoes, avocados and so on. Maracadura's yield is not high, but the flavor is excellent, combined with citrus, yellow fruit and chocolate flavors, very sweet.

Picona is the winner of the Cup of Excellence Cup, winning No. 4, 2011, No. 17, 2011, No. 17, 2012, No. 20, 2014, the 16th in 2014, and winning the runner-up in 2015! The international judges of the 2015 extraordinary Cup gave Picona a high score of 89.35. If you consider that Nicaragua did not hold the extraordinary Cup competition in 2013 and 2016, only 2010 did not win since buying the manor in 2009. the strength is amazing!

Right Side Bean Roaster in Spain is working with Picona for the second year. This year, they conducted several experimental batches on the farm. After harvesting cherries, they first used traditional siphon to remove floating beans and damaged beans so as not to affect the quality of coffee. Then the peeled fruit with all the pectin is put into the fermentation tank to control the temperature and remove oxygen (oxygen-free), but the fermentation time is up to 40 hours, much longer than usual. After fermentation is completed, put into another tank, after only one rinse, in order to retain part of the pectin (semi-washed), and finally sent to Africa to dry on the bed, drying for 20 days.

Legendary Nicaraguan Coffee Bean Variety Malakadura Maracaturra

Malakadura is a hybrid of Caturra and Maragogype. It is conceivable that Malakadura has a very large bean shape, trees can grow very tall, leaves are broad, and the yield is very low, as opposed to Kaddura.

Kaddura, a natural variety of Bourbon, was found in Brazil in 1937 with short plants, easy harvesting and high yield, and soon became a popular variety in Central and South America. The elephant bean, a variant of Typica, was discovered in Brazil in 1870 and is one of the largest coffee sizes in Arabica coffee today.

Since Maracadura comes from Kaddura and elephant beans, which are natural variants of bourbon and Tibica respectively, it can be said that it combines the genes of the two ancestors of coffee, and the flavor is extremely interesting!
