Many coffee experts praise the "French Press" as the easiest coffee brewing tool. After I actually used it, I found that I could not avoid drinking coffee grounds and washing difficulties. I only brewed twice and put the press in the high cabinet. Later, I came into contact with Vietnamese pots and felt that this simple and cheap appliance was much better than a filter press.

I don't know what is the difference between the "Vietnamese pot" bought in the coffee shop and the Vietnamese pot in Vietnam, because I haven't seen the Vietnamese version of the pot.

Quite a lot of people use Vietnamese pot, always follow the Vietnamese experience, with very deep roast coffee beans brewing, and mixed with condensed milk to drink, I drank once, very uncomfortable. But found that the use of fresh dark roast coffee beans to brew, drinking black coffee alone, the flavor is very good. Here is my experience:

1. The Vietnamese pot consists of three parts: the body, the pressure plate and the upper cover. The price is about NT $150 - 250. Coffee beans about 10 grams, almost a special measure of a flat spoon, roasting degree from full city to full city+ is appropriate.

2. Close up, the pressure plate and pot bottom have fine holes, brewing time, hot water and coffee liquid will pass through the fine holes. The filter pot body has a screw column in the middle, which can be rotated and fixed by the pressure plate so as to gently press the coffee powder.

3. Coffee ground, about the same thickness as hand brewed or Syphon brewed. After brewing experience, it can be adjusted according to the freshness, roasting degree, brewing flow rate and taste preference of beans. Pour the coffee powder into the filter pot and gently smooth it without pressure. The top of the screw post is slightly higher than the powder.

4. Turn the pressure plate gently, it should be very light, slightly buckled on the line, then the pressure plate slightly presses the coffee powder, if you feel excessive compression, that is, the amount of powder is too much, you should reduce the coffee powder (excessive compaction is not conducive to hot water through), and finally put the filter pot on the pre-warmed coffee cup.

5. Fill with hot water at about 90-95 degrees Celsius, preferably full. Too little water and insufficient weight will increase the difficulty of hot water penetrating into the coffee layer and will not be conducive to the maintenance of heat.

6. Lightly cover the lid of the pot, and you can open it in the middle of the drip, but too many times or too long, it is easy to lose temperature.

7. Hot water leakage between 5-10 minutes is appropriate, too short may be insufficient extraction, too long taste bitter. If you want your coffee to thicken or if you need fresh milk to flavor it, stop the extraction early when the hot water drips more than 80% and remove the strainer. The flow rate of hot water is closely related to the roasting depth of coffee beans, grinding thickness and pressure plate tightness. Shallow roasting, coarse grinding and loose pressure plate have fast flow rate, and vice versa.

8. A nice cup of coffee appears, when the bottom of the soup is relatively thick, should be stirred with a coffee spoon moderately evenly. Take a sip and if it's too strong, add a little hot water. Vietnamese pot extraction of black coffee, because there is no filter paper or filter cloth, flavor and taste is closer to the original taste of coffee beans, drink black coffee alone is quite good, but bitter will be slightly more significant than filter paper brewing, if you want to add some fresh milk, cream and sugar can be, is not to add condensed milk, personally think that is the most uncoordinated way of seasoning.

Special emphasis, Vietnamese coffee beans absolutely fresh, and to be freshly ground. Freshly ground Vietnamese coffee beans can be handled by a hand-operated bean grinder. For this well-known "postbox grinder", the price ranges from NT $500 to NT $600, which is economical and practical.

Such a simple structure, easy to use, convenient to carry, and good taste brewing method, very suitable for use in the office, there was a period of time, I rely on Vietnam pot and hand-operated grinder to solve the coffee addiction at work.
