Quality control begins from the beginning of harvest: coffee beans are harvested manually and carefully checked for defective beans to see if they are ripe coffee cherries with rich and balanced acidity and sweetness. After that, it is treated in the traditional way, using a lot of water and going through complicated procedures. Especially in the process of fermentation, after three consecutive days of washing and soaking coffee beans with a lot of water, unlike the biggest in other producing areas, all coffee beans are completely soaked in water, thus creating a very special flavor. After the process of washing, the drying process does not take machine drying, but completely uses the sun to make the coffee more rich in flavor.
