Tanzania Mbeya producing area | what is the flavor of Kent kents in Ilomba washing factory in Yilomba village?

The Ilomba washing factory is located in the village of Ilomba in Mbozi province, Tanzania, on the steep hillside of the Mbeya Heights in the southwest of the country. Yilomba Ilomba Cooperative has 24 members, all small coffee farmers. In 2000, with the assistance of Kilicafe (Technoserve), they spontaneously formed a group to improve coffee quality and marketing. In 2010, it was officially registered as Ilomba Best Coffee Group. Over the years, Technoserve mentored effectively. They produced 40 metric tons of coffee in 2012. However, in the same year, Technoserve terminated the local tutoring program, and production dropped from 40 metric tons to only 4 metric tons. Because the bank did not trust the farmers after Technoserve left, they were unwilling to support them financially. In 2013, the group established a relationship with Tembo Coffee Company to help them rebuild the washing plant and provide for farming. It finally regained its prosperity after 15 years in 2014, producing 20 metric tons of coffee. In addition to benefiting their own members, they also provide facilities to neighboring farmers.

After peeling and pulping, cherries are fermented at the bottom for 12 hours, then graded in running ditches, and finally dried in an elevated bed. The sun lasts for 20 days, because the altitude of this area is quite high, the mature period is longer, the size and quality of raw beans are better.

Producing area: Ilomba village, Yilongba Village, Mbeya

Washing plant: Yilongba Ilomba Factory

Producer: Ilomba Best Coffee Group, a top coffee group in Yilomba

Altitude: 1900 m

Bean seed: Kent Kent

Treatment: washed with water, fermented for 12 hours, dried in the African viaduct for 20 days

Flavor description: melon, chamomile, lime

Qianjie recommended cooking:

Filter cup: Hario V60

Water temperature: 90 degrees

Degree of grinding: small Fuji 3.5

Cooking methods: the ratio of water to powder is 1:15, 15g powder, the first injection of 25g water, 25 s steaming, the second injection to 120g water cut off, waiting for the powder bed water to half and then water injection, slow water injection until 225g water, extraction time about 2:00

Analysis: using three-stage brewing to clarify the flavor of the front, middle and back of the coffee. Because the V60 has many ribs and the drainage speed is fast, it can prolong the extraction time when the water is cut off.
