Coffee shows soft acidity and rich layers, like a floral soprano singing in an opera house, and its aroma lingers in the mouth.
This time the coffee beans are from Camelina Rosa Coffee beans at Aurora Manor in Panama. Just like the name of the manor, the flavor of Rosa coffee beans here floats as light as an aurora and is very rich in layers.
The Aurora Manor is located in the northwestern province of Chiriki (Chiriqu í), the western valley of the Baru volcano (Volc á n Bar ú). The manor covers an area of 31 hectares, of which 16 hectares are native tropical rain forests, about 1700 to 1775 meters above sea level. Another 15 hectares of land is planted with coffee trees, about 1485 to 1700 meters above sea level, while the average planting height of the manor coffee trees is 1625 meters, and each tree has a tall Haas avocado tree (Hass avocado) as a shade tree to protect coffee trees from the hot sun and adjust the temperature, so the temperature ranges from about 16 degrees Celsius to 25 degrees Celsius. Coupled with an average annual rainfall of about 3500 mm in the region, it is the most suitable environment for the production of high-quality coffee and raw beans.
During the harvest season, Aurora Manor sends the harvested ripe coffee berries to the nearby Caf é de Eleta S.A. For post-processing, the treatment plant is about 3 kilometers away from the farm, and a modern laboratory is set up for cup test tube and manual screening.
Roberto Brenes, the landowner, is a typical coffee fanatic. His real identity is the CEO of the Panamanian Stock Exchange. He earned his MBA degree from Columbia University in the United States in the early years. After returning to China, he went back to South America for training and returned to work in Panama a few years later. Roberto's rich experience and enthusiasm is reflected in his own coffee. In the early years, the estate was full of rose summer coffee varieties. Later, the landowner also began to try many different tree species and treatments, and introduced washed Kaddura coffee beans and sun-treated Kaduai coffee beans.
Running a coffee estate was originally Roberto's retirement plan, but also because of his own insistence on the quality of coffee, his rose summer coffee variety won the first place in the best Best of Panama water-washed rose summer category in 2013. After winning the championship, the owner of the manor used his favorite Triathlon to wash the champion rose summer and named it Ironman (iron man). The washed rose summer coffee beans produced by the estate will be named iron man rose summer coffee beans. In 2013, the iron man rose summer coffee beans harvested a total of 1700 pounds, of which 150 pounds were selected for the competition, and the price per pound closed at an all-time high of US $160.25, which translates to about 2574 yuan per kilogram of raw beans.
In 2014 and 2015, the sun roses and summer coffee beans produced by the estate also won the 10th and 12th place in the best Best of Panama roses summer group, with gold exceeding US $30 (both more than NT $2500), indicating its extraordinary strength. In order to better distinguish the 2014 rose summer from the 2013 rose summer, the manor owner named the sun group Camilina (Camelina) after his granddaughter, and the sun-treated rose beans from the estate were later named Camelina Rosa coffee beans. Among them, the 2014 batch of Camelina Rosa Coffee was rated by Coffee Review with a score of 97, which ranked first in the annual score. The evaluation flavor indicates that the coffee is full of mango, citrus, guava, strong floral aroma, passion fruit, cloves, lilies, rich and smooth acid, syrup-like and lively taste, and the colorful flavor is very long-lasting.
In order to better express the attractive acidity and rich layers of Camelina Rosa coffee beans in Aurora Manor, Qianjie roasters use medium-shallow baking to make their charming acidity and aroma better. Because this rose summer coffee bean grows at high altitude, its bean density is relatively famous, shallow roasting does not change its skill density much, compared with moderate and deep roasted coffee beans, the flavor substances of light roasted coffee beans are not easy to be extracted by cup, so they need higher water temperature for extraction and cooking.
Qianjie Coffee hand reference: 15g coffee powder, 1:16 powder-water ratio, fine sugar-sized grinding (medium / 78% of China 20 standard sieve), water temperature of 90-91 degrees Celsius, V60 filter cup.
With three-stage circular water injection technique: first, use 30g water to fully wet the powder layer in the shape of "hamburger" and steam for 30s, and then cook in the second stage. In the front street of the second section, the smooth medium-fine water is injected around the circle, and the water is injected to 125g at 55s of the timer, then stop and wait for the water level to drop to 2 / 3 of the powder layer to inject into the third section. The third section of the front street continues to be flat 1: 55 ".
