This batch of coffee comes from Lancang, produced by Yunnan Aizhe Coffee team, planted at 1350 meters above sea level, 100% manual red fruit picking, plus fine scaffolding for natural drying. Refined processing, regularly turn over the drying scaffolding to ensure the uniform drying of coffee fruits. In the continuous picking and processing experiments during this production season, friends at the Aizhe coffee processing station finally controlled the moisture content of this sun-dried coffee at 10.9%, the density at 889g/L, and the raw bean particle size at 14-16 mesh.

It is precisely because of the strict quality control requirements that this batch has only 600kg production this season. The spice flavors of the Katim variety combine well with sun-fermented red wines, with honey, raisins and honey sweetness.
