Honey treatment, called HoneyProcess or Miel Process, is used in coffee gardens in Costa Rica (Costa Rica), Panama (Panama) and Guatemala (Guatemala), which is called Honey Coffee. The so-called honey treatment refers to the process of making raw beans with mucous membrane for sun-drying.

Honey treatment is the way in which the peel and pulp are removed and the coffee beans with pectin are dried.

Honey treatment is different from other processing methods, it should be dried on AFRICAN BED (tanning bed).

So far, pulp treatment and washing are still on the same path. The next water-washed coffee beans went into the fermentation tank to remove the pulp attached to the coffee beans. Unlike the pulp sun, coffee farmers put coffee beans with pulp directly on the drying rack or cement floor, without removing the pulp and allowing the sun to expose them. From here on, the pulp solarization method is very similar to the solarization method, the only difference is that the peel of the pulp solarization method is also removed. Because shell beans are more "ventilated" than sun-skinned beans, the drying time will be shorter than the sun method, and it will take about 5 to 30 days, depending on the amount of pulp left on the shell beans. During this period, coffee farmers need to turn the coffee beans on time to avoid excessive fermentation and local mildew caused by the humidity and organic matter of the pulp. For honey treatments with different degrees of pulp residue, the drying details are as follows:

* Yellow honey scrapes off the pulp, and the drying method is the simplest exposure, which takes about 8 days.

* Red honey scrapes off less flesh, requires a milder drying method than yellow honey, reduces exposure time, or sets up a sunshade, which lasts for 12 days

* Black honey almost did not scrape off the flesh, the drying conditions needed are the most harsh, using the way of shade drying, so that the pulp essence is fully transformed, this step should last at least 3 weeks.
