Because shell beans are more "ventilated" than sun-skinned beans, the drying time will be shorter than the sun method, and it will take about 5 to 30 days, depending on the amount of pulp left on the shell beans. During this period, coffee farmers need to turn the coffee beans on time to avoid excessive fermentation and local mildew caused by the humidity and organic matter of the pulp. For honey treatments with different degrees of pulp residue, the drying details are as follows:
* Yellow honey scrapes off the pulp, and the drying method is the simplest exposure, which takes about 8 days.
* Red honey scrapes off less flesh, requires a milder drying method than yellow honey, reduces exposure time, or sets up a sunshade, which lasts for 12 days
* Black honey almost did not scrape off the flesh, the drying conditions needed are the most harsh, using the way of shade drying, so that the pulp essence is fully transformed, this step should last at least 3 weeks.
