The three Codiera mountains in Colombia run north and south to the Andes, and local coffee farmers grow coffee along the highlands of these mountains, with diverse climatic production conditions; and because of changes in altitude, a large part of Colombia's coffee industry is produced by smallholder production.

However, unlike the coffee-producing countries in Central America, which are mostly classified by the altitude of their growth, Colombian coffee is distinguished by the size of the bean-shaped mesh, of which the Supremo grade above 17 mesh is the largest, and the next grade is the 16-mesh EXCELSO EXTRA.

The Big Bird Manor was founded by several boutique coffee enthusiasts Felipe, Elisa and Carlos, who have a revolutionary and innovative experimental spirit in the boutique coffee field. The Bigmouth Manor is located in the Cundinamarca region of Colombia, with 18 hectares of land 1800 meters above sea level in cooperation with small farmers in neighboring areas.

Different from the traditional experimental treatment, they produced a unique micro-batch of coffee, and this batch of anaerobic controlled lactic acid fermentation is one of their prospective experimental masterpieces. Compared with the anaerobic treatment batches on the market, they do not have much fermented flavor and have unique yogurt sweetness and plumpness, and the aroma of coffee grinding is quite attractive.

The coffee beans used in the 2018 W.BC competition come from this manor!

The aroma of grape and cherry, the aroma of guava fermentation shows great aroma in the coffee cup, the acidity of cranberry and juicy malic acid, the delicate fragrance of orange lasts for a long time!
