There are three main ways to treat coffee: sun exposure, water washing and honey treatment. The sun drying method is to directly expose the coffee cherries before removing the shell and pectin layer; the water washing method is to screen the coffee pulp before exposure and ferment to remove the pectin layer; the honey treatment law is between the sun method and the water washing method: the pectin layer is directly retained and exposed after the coffee pulp is screened.
Solarization method
Pour the coffee cherries into a large tank, pick out the inferior beans by buoyancy, remove the good fruits and dry them, and finally beat off the pectin in the peel with a sheller.
Flavor description
Because the whole fruit is fermented together, the fermentation taste is the most obvious during extraction.

Washing method
In the same sun method, soak water is used to remove the floating shoddy beans, then the peel and pulp are knocked off by machine, the coffee beans are put into the sink, pectin is dissolved by fermentation, and finally dried by machine.
Flavor description
Compared with sun-dried beans, the flavor is more refreshing and clean.
Honey treatment is a compromise between sun exposure and water washing.
Honey treatment
The so-called "half-sun method" and "half-water washing method" can be regarded as a kind of honey treatment. Honey treatment is a compromise between the two. The peel is removed before the sun, but the pulp and pectin layer are preserved. After drying, the sticky layer and silver skin are removed by machine.
Flavor description
The feeling of pectin is as sticky as honey, which also makes the flavor sweeter of honey treatment.
Soak the raw beans in oak barrels to make them absorb the oak barrel flavor.
