Monsalve Botero's husband, the hostess of San Jose Manor, was engaged in making rum barrels and brewing rum. Occasionally, when she accompanied her husband to fill rum distillate for fermentation preparation, she suddenly thought that if the coffee beans were fermented in rum barrels, it would produce different flavors. It was also a whim. She tried to combine rum oak barrels with coffee beans.

Rum barrels are made of oak. The process of roasting wood changes the chemical composition of oak during production, producing the "oak flavor" that makes tasters obsessed. Aged oak barrels are essential tools for brewing high-quality rum, and coffee beans are fermented in them, giving this coffee a unique rum flavor.

Since 2013, Monsalve has tried to use rum barrels of different ages for wine-making low-temperature fermentation for different fermentation times, and finally found the ideal flavor in 2018 to create a coffee bean that is different from traditional washing.
