Sumatra is a large island, but coffee is not grown all over the island. Coffee trees are grown in large quantities only in the northernmost two of the island's eight provinces-Aceh and Subei: Aceh coffee is mainly produced in Lake Tawar. Sumatra coffee production system is unique: there are few large coffee plantations on the island, replaced by tens of thousands of small farmers-these small farmers not only grow and harvest their own coffee, they also take their own coffee seeds from the berries and expose them to the sun. However, when the raw beans are not completely dried, they will be stripped of the seed shell…and collected by small, medium and large buyers and dried in stages before being handed over to exporters. To the exporter's hands, sometimes even need to be sun dried again to the moisture content of the standard, before entering the bean picking room to manually pick out defective beans and impurities and sieve classification packaging export.

This unique semi-washing process is locally known as Giling Basah, also known as wet-hulled. This system allows coffee beans to dry at a relatively slow rate, resulting in a characteristic Sumatra rich texture; although it requires a lot of manpower to pick out defects, it brings a thick style that is unique in the world!
