The water poured out for the first time will "steam" us-the water touches the ground and releases gas, causing the powder bed to expand and appear to blossom. This is important for the removal of those gases produced in the brewing extraction process, and it is also ready for full extraction.

To extract coffee is to extract soluble compounds from coffee grounds with water. Saturated coffee grounds are more likely to release these compounds. Think of it as pouring water on dry powder beds and wet powder beds. In a dry powder bed, the water will flow away. In a wet powder bed, water will be absorbed. This is a similar interaction.

For steaming, I add 1.5-2 grams of water because of coffee grounds. So in 25 grams of coffee, I'm going to add 40 to 50 grams of water (just make sure you cover the ground and nothing looks dry). Then wait 30-45 seconds (I waited until the floor bed stopped moving). END
