Production, harvest and processing
In Sidamo, coffee is grown near home and the planting density is very low, ranging from 1000 to 1800 plants per hectare. Garden coffee production system is widely used, supplemented by organic nutrition. According to the change of altitude and the distribution of precipitation, the harvest period varies from September to December. The harvest depends mainly on family labor. Freshly picked cherries are sorted before pulping and then sent to junior cooperatives for wet processing. After fresh and clean cherries are sent to the laundry, they are beaten into pulp and fermented naturally. The fermented coffee is washed with clean tap water, soaked in clean water, and then dried on the bed to keep 11.5% moisture. Sun-dried parchment (washed and dried coffee with skin) is stored in the warehouse until it is sent to the trade union in Addis Ababa. Peel off the shell and put the clean beans in a labeled bag (60 kg / 132 lbs), ready for export.
