This year we will taste a new variety of coffee called Sidra for the first time. Yiannis Taloumis, Taf, director and sponsor of the direct relationship project, went to East Cordillera in the Andes, on one of his favorite farms, La Palma and Ertusan, as usual, looking for coffee that will provide the perfect cup!
There, the farm owners gave wholehearted attention and care. They planted a large number of varieties three years ago, from red bourbon and Typica, and harvested the first fruit this year, because the trees seem to have adapted perfectly! The structure of the branches is reminiscent of geisha trees and bears huge rectangular fruits. They have successfully sublimated the local flavor of this area, which is a very special microclimate with high humidity.
They also used a perfect process, especially for Taf coffee, using lactic acid fermentation. The result is a complex cup with flavors of red apple, bubblegum and milk chocolate. This is how Sidra was born, from unique fruits and the most ripe cherries.
Taf is pleased to announce that within a few days, Sidra will be at Taf Bakery, the only bakery in the world that has bought La Palma and El Tucan from legendary Sidra.
