FINCA AURORA(NEW SAN CARLOS, RETALHULEU)
Our Guatemala SHB organic coffee is grown on a single estate called FINCA AURORA. This property is located near the village of Nuevo San Carlos in the Retalhuleu region of southwest Guatemala.
This farm (489 hectares) was founded in 1929 and was previously owned and certified as organic by the founders of UTZ KAPEH. It grows in the shade of native trees and fruit trees such as Chicharro, Matabuey and Majau. This coffee is grown at altitudes of 900 to 1200 meters.
This coffee is available in Catuai and Caturra. Cherries are harvested from November to March. The total area under coffee cultivation is approximately 350 hectares, yielding approximately 2,000 bags of exportable quality coffee. This coffee is CERES certified organic coffee by JAS. The farm started using organic food 70 years ago, but it wasn't certified until 1998.
Red cherries are harvested and wet treated on the same day on the farm. Wet treatments are carefully done at their beneficiaries and are located at 9am sharp. I'm surrounded by plantations. The farm has its own natural spring running through the entire plantation.
Once this process is complete, the coffee is washed and the parchment is carefully placed on a concrete patio to dry, allowing a cool breeze to blow through the coffee. All of this happens on farms.
Once the beans reach the ideal moisture content of 11 - 11.50%, they are bagged, stored in the farm's warehouse and preserved in parchment. The parchment will be ground in farm-owned and operated mills, which are also certified Ceres organic. Once the order is placed, milling is completed, thus keeping the beans in the parchment as fresh as possible before export.
