We are excited to release El Diviso because we have found a great new partner in Colombia. Tierralta is helping us build stronger relationships with the farmers we buy coffee and help quality-focused producers transfer coffee to the right roasters. Nelson Rodriguez of Diviso Farm is one of them. Nelson is a coffee grower dedicated to quality, turning coffee into his own family business. Coffee production is one of the pillars of Wirat's economy, and many families depend on it. As a result, Nelson decided that he must become an expert in managing his crops while innovating his practices to create the highest quality coffee year after year.
Diviso Farm is located in southwestern Colombia, which is famous for its rich biodiversity. Located in the Pitalito Mountains of the Wirat Mountains, the climate is suitable for growing specialty coffee, with an average temperature of about 65 degrees Fahrenheit and high humidity. Because of these climatic conditions, Nelson decided to control the fermentation cycle for 36 hours, using lower temperatures to prolong the fermentation, thus creating a clean and complex flavor.
El Diviso is full of fresh fruit flavors, including cranberries, peaches and nectarines, and you can expect it to be juicy. The palate is vibrant and bright, with rich aromas of sweet sugarcane and dried cherries. Sweet and sour balance unifies in beautiful harmony, allowing all elements to shine in a great structure.
