What makes "Shirley" special is the beans processed by low-temperature fermentation in Shirley buckets, which are used by Sherry wineries in the whisky industry to age. Sherry is a famous fortified wine produced in the sunny Jerez region of southern Spain. Sherry must be made through the Solera system (Solera System) ripening process.
The Solera system essentially refers to the process of mixing and aging different vintages of sherry after being fortified. In the Solera system, all the barrels are stacked according to the vintage, the oldest sherry at the bottom and the youngest sherry at the top. Every year, part of the wine is extracted from the bottom barrel for bottling and sale, and then the corresponding proportion of wine is extracted from the upper barrel to replenish it, and so on ~ this is what makes sherry unique!
In Honduras, the sherry beans are carefully washed and then fermented in whisky oak barrels ripe into sherry for 30-40 days (about 15-20 ℃) before drying in the shade.

Technique: steam 30 grams of water for 30 seconds, small flow evenly injected to 125 grams of water, when the water level is about to expose the powder bed, continue to inject water to 225 grams, remove the filter cup when the powder bed is about to be exposed, and do not need 5g water at the end. The extraction time for steaming is about two minutes.
