Wolichu Wachu

ETHIOPIA

Honeydew, Milk Chocolate, Sage

This multi-faceted Ethiopian single-origin wine has aromas of white grapes, black tea and whole wheat biscuits. The wine is juicy with hints of pecan, papaya and grapefruit. The cup changes as it cools, and the crisp Meyer lemon taste matures, with a fudge and sage finish.

"the Wolichu Wachu washing station was established in 2017 to serve 4500 local small farmers in and around the town of Haro Wachu in the Uraga region of Guji, Oromia region, Ethiopia. Coffee producers here cultivate an average of half a hectare of land and send cherry coffee to a cleaning station, where it is processed as necessary.

"batches washed like this are sorted in cherries at the time of shipment, then depilate and ferment under water for 48-72 hours. Then wash the coffee, soak it for 8-16 hours, then lay it flat on a high bed and dry for an average of 9-12 days.
