Front Street-introduction to Sidamo Coffee
Ethiopia is the birthplace of the famous Arabica coffee beans, and people have always maintained the tradition of harvesting wild coffee beans. The coffee garden with an elevation of more than 1500 meters has formed a unique coffee style after more than a thousand years of evolution and adaptation. Ethiopian coffee grown in the natural wild environment is called "wilderness coffee". It retains the most primitive and natural taste of coffee beans and has the most direct and full expression of the local environment.
Since Ethiopia changed the administrative division around 1995, the greatest impact on the coffee area is that the original Sidamo Sidamo province is divided into the new Sidamo Sidama (the original minority), and most of it is classified into the Oromia Oromia state. And Yega Xuefei, which used to belong to Sidamo province, is now included in the new Gedeo of Gaidio, and there will be a mix of Ethiopian coffee products in circulation in the market named after the new and old regions.
Sidamo Sidamo
Located in the fertile highlands of the East African Rift Valley, Sidamo is one of three registered coffee producing areas in Ethiopia (the other two are Hara and Yega Sheffield). It is 1550-2200 meters above sea level, with sufficient rainfall, suitable temperature and fertile soil. It is reported that about 60% of the coffee beans produced here are washed. Sidamo Coffee is famous for its rich flavor, mellow body, bright acidity, floral and citrus flavor.
Like Yega Xuefei's coffee planting model, Sidamo is mostly pastoral, in which coffee farmers plant coffee trees near their living areas and harvest them during the harvest season. it is then sent to a nearby treatment plant built on water for unified treatment (or purchased by a middleman).
In addition to a small number of plantations that have the strength to grow, pick and handle raw coffee beans independently, many coffee beans from different regions and varieties will be centrally processed by the processing plant and then sent to the auction house for official evaluation and grading.
Sidamo coffee raw beans are slightly gray, some places are thick and some places are small, the acidity is soft and strong, mellow and light, sweet and spicy. But unlike Yegashifi coffee, Sidamo coffee has sweet citrus flavor, full berry aroma and tropical fruit flavor, which is very rich and delicate on the palate.
Knowledge: Arabica coffee is generally thought to be originated from the Ethiopian plateau, widely distributed in the tropics, after repeated mutation and breeding, derived many varieties.
