Semi-washing (Descascado) treatment
The harvested berries are treated and classified: one side of the red and green berries, while the "boia" berries are separated to the other side for the first mechanical screening in water.
When the coffee berry is still wet, the mechanical pulp peel is separated from the first pulp. The advantage of this treatment is to avoid the consumption of a large amount of water and the problem of natural fermentation, because the treatment time is shortened.
The pulp and mucus of the coffee berries are completely removed by a high-pressure washing machine. If the raw beans are spread into a very thin layer in the sun field, the risk of fermentation can be further reduced.
After five or six days of natural drying, finally use a wood or gas-fueled dryer for drying.
The first half of the wet method is used to remove the pulp, and the second half is the dry method, which is a compromise between the two methods, also known as the "semi-washing method (Pulped Natural)". The whole water washing method will carry out pulp removal treatment and flume fermentation washing respectively, totaling two washing operations, but this treatment is only carried out once, which is then called "semi" washing method. Although only half of the water is used, it is still classified as wet treatment in the international vocabulary because it is still refined with water.
The semi-washing method is a novel refining method formed by the continuous improvement of the pulp removal machine after the 20th century. Through the use of a high-performance pulp removal machine or a device called "Pectin removal Machine (Mucilage Remover)", not only the pulp can be removed, but also the pectin can be scraped off at the same time, so that the fruit can be dried and shelled in a state covered with endocarp to remove raw beans.
Although this method has been popular in Brazil since the 1980s, in recent years, Central American estates in Costa Rica and Panama have improved this method into a treatment called "Honey Process", which controls the flavor by adjusting the degree of pectin scraping, and has been used in high-end coffee commodities such as boutique coffee. The "Sumatran" refining methods adopted on the Indonesian islands of Sumatra and Sulawesi are also classified as semi-washing treatment.
