Qianjie-introduction to coffee grading in Kenya
Kenyan beans are loved by many people, not only because they are delicious, but also because they are so big! The "AA" in Kenya AA is the grade of washed Kenyan coffee beans.
Classification according to screen
The way of sieve grading is to grade according to the size of raw coffee beans. Raw beans are graded by determining the size of the beans through a holed iron plate sieve. The size of the hole in the screen is 1x64 inches (less than 0.4mm), so the size of the screen indicates that there are several 1x64 inches. For example, the size of sieve 17 is 17thumb 64 inches, which is about 6.75mm. The larger the number of the screen, the bigger the particles of coffee beans.
Kenya is one of the most representative countries rated by sieve, along with Tanzania and Colombia (some countries use more than one classification, and the examples given here are representative, mainly in this way). Kenya's most advanced AA++ requires sieves larger than 18, that is, beans larger than 7.15 mm. The detailed grading of Kenyan beans includes AA++,AA+,AA,AB and so on:
AA: large granule raw bean, mesh 1718 mesh
AB: 15016 mesh, which is a little smaller than AA, with the majority of output.
PB: round beans, regardless of weight and flavor
C: mesh 14, a little smaller than AB
E: elephant bean
TT: lighter beans blown with a filter from AA and AB beans
T: fine beans with broken particles
The above grades are mainly based on particle size, rather than the quality of coffee. AA is the largest network, while AB is slightly smaller than AA. Although AB is not as solid as AA, both flavor and sweetness have a unique and irreplaceable position.
Knowledge: the quality of coffee can be changed according to altitude, latitude and soil chemical composition. Growing coffee outside the right range of factors will greatly change the final quality of coffee.
