Treatment of raisin honey

The treatment of raisin honey is actually a kind of heavy fermentation honey treatment. When coffee and peaches are harvested, the coffee fruit is poured into a big water trough, and the ripe fruit will sink to the bottom of the water. Underdeveloped or overripe fruit will surface, these floating beans need to be removed, the dried coffee fruit is placed on an elevated bed to dry like raisins, then the pulp and peel is removed, and the fruit is preserved before drying. The flavor will be more fermented, and the flavor will be better preserved than other honey treatments. keep turning these coffee peaches during the drying process to make them dry evenly, but to master the rate of turning, slow drying is necessary to ensure that the coffee is fermented, but not so slow that the degree of fermentation occurs.

Yellow Catuai; Catuai Amarillo is a hybrid of Mundo Novo and Kaddura. It was first cultivated by the Brazilian Institute of Agricultural Research (Instituto Agronomico de Campinas) in 1949. Like Red Catuai,Catuai Rojo, Kukaduai has extremely high disease resistance and is co-planted at high elevations and in its multi-arid region. Several kinds of Catuai also have a very dry sour taste. When raw beans are observed, the beans show a bluish color, with a mild aroma of tea and a hint of leavening.

The Costa Rican Canet family series includes Mozart, endorphin and Baja coffee. Just this year, a new coffee bean named Chopin was added to the Costa Rican sound family series, which is different from other flavors. This Chopin bean has a bright rose fragrance and outstanding sweetness.
