The Kongjia cooperative can be said to be extremely cautious in its handling of coffee beans. First of all, they manually pick the fully ripe coffee fruits from the coffee trees, then pick out the impurities, and then go through sieving, specific gravity screening, and electronic weighing screening, so as to ensure that the final coffee beans are as uniform as possible. After washing, it is placed on an elevated bed to dry in the sun.
It is this repeated work that gives birth to the so-called Yega Sheffield, that is, strong aromas of jasmine, lemon or lime acid, and possibly peach, almond and tea.
The washing method is the technology that these farmers have introduced from Central and South America since 1972, because the traditional sun treatment can easily make coffee beans mildew and difficult to control. On the other hand, the washing treatment can make the jasmine and citrus aromas of Yega Xuefei clearer and more refined.
I always feel that the coffee from every place of origin will have the "taste" of that land and human feelings, and I have never had the chance to go to distant Africa. I can't personally experience how the people living in that land greet the first glimmer of dawn on this small piece of land. It's just that whenever I drink Yega Xuefei, I can always feel their smile, so my mood becomes as colorful as the land of Africa.
