Finca Miravalle is owned by Luis Duarte and is located in Apaneca, Ahuachapan, not far from Mount Santa Ana. Miravalle is about 1500 meters above sea level and is grown only in Pacamara. It is part of larger coffee plots, some of which are divided by separation of varieties, while larger plots are a mixture of varieties. Although vulnerable to leaf rust, most of Duarte's farms are still grown in Bourbon and Pacamara. Many farmers are planting disease-resistant varieties, but Louis Duarte chose to continue to grow them because they are widely believed to taste better than most disease-resistant hybrids, and through good farm practices try to prevent leaf rust and fungal outbreaks (proper space between plants, regular pruning, cleaning under trees, directional spraying, etc.).
Miravalle covers an area of only a few hectares and lives on the verdant slopes of the Apaneca-Ilamatepec Mountains. The order is the result of a new coffee project carried out by a local mill in the area, whose goal is to identify the best quality coffee from farmers who have already bought it. The coffee is then kept separate throughout the grinding process and sold in separate small batches rather than lost to a large number of mixtures.
City roasting is a good starting point for this coffee, with bitter cocoa and nut hues complemented by ripe sweetness and full-bodied wine. The dry aroma has cereal sweetness, cocoa baking and toffee-coated nutty aromas in the steam. There is also an overlap between cocoa baking tones and brown sugar, which can also withstand deeper baking, and is actually intensified with the development of baking. The lightest city baking has almost no cocoa / chocolate (or sweetness) in the cup, while Full City is full of chocolate. As espresso, the nutty flavors of cocoa and cocoa cream are impressive. Whether it's coffee with cream, latte, cappuccino or more, it's a great choice for milk drinks.
