Geographical features and flavor characteristics of Colombia

Colombia is a South American country, bordering the Caribbean Sea to the north, Brazil to the southeast, Panama and the Pacific to the west, and Peru to the south, with Spanish as the official language. Colombia's rich landform, low latitude, high altitude and excellent natural environment are excellent conditions for the growth of boutique coffee. Located between 3-8 degrees north latitude, it belongs to the low-latitude coffee belt. It can be harvested twice a year, and ripe coffee can be harvested almost every month from south to north.

Most of Colombia's boutique coffee has rich ripe fruit aromas and obvious sweetness at the end. Slightly sour and toast-like aromas are characteristic of the producing area, resulting in the spread of acid into the throat, and the aftertaste is accompanied by a mellow taste of sweetness and bitterness. it is highly compatible with other coffees, so it is also used to increase aroma and mellowness in high-quality mixed coffee.

Introduction of Huilan Province

Huilan province is located in western Colombia, where the Andes form a narrow canyon, where coffee grows on the slopes, which is also a well-known coffee-producing area in Colombia.

The coffee in Huilan province is very balanced and warm because of its fertile volcanic soil, moderate rainfall and high-altitude microclimate. It is mostly produced by small farmers, and about 80% of the producers in the region grow coffee on less than 3 hectares of land. Because most of the work is taken care of by small farmers themselves, the labour force is rarely outsourced, so farms can be managed more thoroughly and intensively and coffee beans can be processed.

Huilan is a very famous boutique coffee producing area, which has been repeatedly recognized by world competitions. The unique low-latitude and high-altitude microclimate gives birth to a variety of flavors of fine coffee. Coffee grows on the slopes of the canyons formed by the western coastal mountains and the eastern mountains. This area has always been a big barn for producing good coffee in Colombia. The town of San Augustin has the best output value because of the Los Nalenhos River (Los Naranjos Orange River). The riverbank in this area has beautiful scenery and large tracts of lavender, and it is the habitat of butterflies and wind birds. It is also an ancient and special mysterious place with giant carvings of Stone Forest in Colombia, where people live to protect the land from destruction. Farmers in the region joined forces in 2001 to improve their coffee management skills, forming the Los Nalanjos Coffee Association (La Asociacion Los Naranjos de San Augustin), with about 50 farmers, limiting the farm size to about 2.8ha and yielding 1500 to 2000 kg per hectare.

Flavor characteristics of St. Augustine

St. Augustine (San Agustin) is a famous coffee producing area in Colombia, located in Vera province, with an average elevation of 1730 meters above sea level, surrounded by mountains, fertile land and suitable for farming. In recent years, Colombia attaches great importance to water resources and avoids the use of coffee beans as much as possible, which is similar to the honey treatment in Central America.

St. Augustine coffee beans have an extremely special taste. It is treated by washing, which highlights its own characteristics. In terms of taste, St. Augustine coffee has the attractiveness of almond wine, with creamy aromas in the middle and a juicy berry finish. It is fresh and charming as a whole, with a twirling afterrhyme.
