Brazil is the world's largest exporter of coffee, because of different planting and treatment methods, coupled with differences in climate and altitude, the coffee flavor of different estates is obviously different. Generally speaking, there are three ways to treat coffee beans in Brazil: drying, semi-washing and washing.
Drying method: the taste is mostly rich, the aroma is also obvious, but the quality is uneven.
Washing method: the acidity is more obvious, shallow baking will have the smell of grass, deep baking will have the taste of chocolate.
Semi-washing method: it has the advantages of both sun-drying method and water-washing method, it is warm and smooth, and has a thick taste.
Peaberry beans are characterized by a higher consistency than ordinary coffee beans, with chocolate and malt sweetness in the thick palate. when roasted, the latter part is sweet with the delicate acidity of pineapple and citrus fruit, coupled with a very charming creamy aroma and greasy finish.
