Even for experienced roasters, the transformation of coffee in the roaster has never ceased to be fascinating and exciting, especially if they are lucky enough to work with really good green coffee, as we do in counterculture.

What is coffee roasting?

The process of turning green coffee beans into roasted beans used to make coffee is quite simple, but it is also easy to mess up. When roasting coffee, you need to heat it carefully and observe it carefully to make it reach a specific internal temperature or "development" level.

During baking, heating not only yellowes sugar caramel, but also catalyzes a series of other chemical and physical changes that, with proper operation, create a familiar and surprising product. Basically, roasting uses different types of calories to produce chemical and physical changes in raw coffee.

There are three basic types of heat transfer: conduction (contact heat)-like convection (hot air) you get from a frying pan-like radiation (radiation) from a hair dryer or popcorn-like the heat transferred by the sun through space.

The shallow roasting profile tends to emphasize the unique characteristics of coffee, while the deeper roasting tends to emphasize more roasting characteristics. We try to provide a variety of personal information on the menu to suit different tastes. Each coffee has a specific roasting level target, and we use a light reflectometer called an Agtron machine to evaluate the roasting level of each batch of coffee to ensure consistency. Agtron reflects the ultraviolet light from the coffee sample back to the sensor, analyzes the color of ground coffee or whole bean coffee, and then outputs a number that represents the degree of roasting. The lower the number, the darker the roast.
