introduction

With the popularity of fine coffee, hand-brewed coffee has become a part of many people's lives. While pursuing the fun of brewing coffee, we are studying more filter cups/tools that make the hand-brewing process easier, more stable, and more fault-tolerant, changing the extraction of coffee through physical conditions.

One of them, LilyDrip/Balance Cone, a small and exquisite hand brewing aid that greatly improves coffee balance, was once called a magic weapon by beginners. How many gods are there?

LilyDrip was born.

LilyDrip was inspired by a marble. A little girl named Lily put a marble in a V60 filter cup when her father was preparing to brew coffee. His father did not pick up the marble, but continued to put it in the filter paper for brewing. Unexpectedly, with the help of marbles, coffee unexpectedly tastes good, so LilyDrip was born after research and improvement according to the principle.

LilyDrip extraction principle

We now review the extraction characteristics of the V60 filter cup: the conical design of the filter cup at a 60-degree angle is wide at the top and narrow at the bottom, which also means that when the coffee powder is poured into the filter cup, the powder layer will be thicker in the middle. Because of the increased resistance caused by the thicker powder layer, the contact time between water and coffee powder is prolonged, and the design of spiral ribs makes the flow speed faster and reduces clogging.

At the same time, this also makes the V60 filter cup very particular about the grinding degree of coffee! If the coffee powder is ground fine, it will increase the density of the thick powder layer, prolong the extraction time, and easily extract the bad impurities; if the coffee powder is ground coarse, it will reduce the density of the thick powder layer, slow down the extraction time, and the coffee flavor will be flat overall. The addition of LilyDrip reduces the thickness of the powder layer, thus speeding up the passage of water.

Reduce the thickness of the powder layer and reduce the contact time between water and coffee powder

Lilydip's addition folds the conical angle of the filter paper. After pouring the coffee powder, the original conical powder layer will become a conical ring. This operation reduces the overall thickness of the powder layer. Pour 15g powder into conical filter paper, the total thickness of the powder layer is about 5 cm, and pour into conical filter paper, the thickness of the powder layer is about 2.5 cm, which means that the thickness of the powder layer is reduced by about 1/2, and the area of the upper powder layer and the lower powder layer will become close.

See here a small partner will say, such a flat bottom filter cup is not fragrant, must the whole multiple tools! The flat-bottom filter cup on the market originally did not have rib design, relying entirely on the wave-edge filter paper to form the exhaust channel, so there will be this problem, the flow rate is slow, forming the soaking process, making the coffee as a whole more full, but lack of layering.

Lilydrip changes the shape of the filter paper, reducing the thickness of the powder layer while ensuring the advantage of the original fast flow rate, making the coffee more balanced, but also reflecting the layering of the V60 filter cup brewing.

The area of the upper and lower powder layers becomes close, the thickness is reduced by 1/2, and the contact time between water and coffee powder will be shortened. Will there be insufficient extraction? Let's see through experiments.

Brewing object: Front Street Costa Rica Stone Manor with blueberry coffee beans, brewing parameters: medium and fine grinding degree (78% through Chinese standard No.20 sieve), water temperature 90℃, powder-water ratio 1:15, three-stage circular water injection.

Brewing method: the first stage of water injection 30g, and then stewed for 30 seconds. Then, when the water level drops to 125 g, the water is injected into the powder bed. When the water level drops to 225 g, the water injection is stopped. When the water level drops to expose the powder bed, the filter cup is removed.

|No LilyDrip, Total extraction time 2' 01", Brewing flavor: blueberry fudge, citrus acid, floral, fermented aroma, sweet and smooth taste.

|LiliyDrip used, total extraction time: 1' 40 ", brewing flavor: blueberry jam, rose, sweet, citric acid, overall balance but thin finish.

This group of experiments can be seen that the use of LilyDrip brewing time will be greatly shortened, although the overall balance, but the actual extraction rate will be lower than the normal v60 brewing, the aftertaste is not obvious as direct v60 brewing. But! If you are using a bean grinder that produces too much fine powder, Lilydrip is a good solution to the problem of "over-extraction."

last

Can LilyDrip only be used on V60 filter cups? No! It fits almost all conical filter cups, and it works differently with a variety of conical filter cups.
