What coffee beans are suitable for iced coffee? The difference between hot coffee and iced coffee
Guide reading
Hand-brewed coffee can well show the flavor of coffee beans. Generally speaking, hot-hand coffee is recommended in front of the street, but the hot summer makes guests more inclined to ice-hand coffee. Many guests will ask, what is the difference between ice hand brewing and hot brewing coffee? Qianjie will give you an answer today.

What's the difference between ice hand and hot hand in cooking?
Ice hand flushing is actually improved on the basis of hot hand brewing, which is intended to get a cup of iced coffee with the same flavor as hot hand brewing. The previous brewing scheme of street coffee is taken as an example.
Qianjie hot hand flushing (shallow roasting coffee beans), use 15g coffee powder, grinding degree 20 standard sieve pass rate is 80%, water temperature 90-92 ℃, powder water ratio is 1:15, that is, the total water injection is 225ml. Three-stage water injection was used. The first stage was injected with 30ml for 30 seconds, the second stage was injected with 100ml, and the third stage was injected with 95ml.

And Qianjie ice hand flushing scheme is to use the same 15g coffee powder, the water temperature is still 90-92 ℃, the grinding degree is finer than the hot, the 20 standard sieve pass rate is 85%, the powder-water ratio is 1:10, that is, the total water injection is 150ml, and mixed with 100g ice to cool and dilute. The brewing technique uses three-stage water injection, the first stage is injected with 30ml and steamed for 30 seconds, the second stage is injected with 60ml, and the third stage is injected with 60ml. Pour the coffee liquid into a cup with 100g ice cubes and shake well.

In the comparison of brewing methods, the coffee beans made by ice hands are ground finer, use less water to brew, get a high concentration of hot coffee liquid, and then use ice to cool and dilute it to form iced coffee.
What's the difference between the two?
In order to fully compare the difference in flavor and taste between iced hand brewed coffee and hot hand brewed coffee, the front street is compared with Ethiopia's Huakui (shallow roasting), Brazil's Queen Manor Huang bourbon (medium baking) and Indonesia's gold Manning (deep roasting).
Huakui
Hot hand coffee: exudes the aroma of berries, tasting citrus, berry-like acidity, sweet also has a good performance, rich layers, smooth taste.
Ice hand coffee: weak aroma, a touch of flowers, taste citrus acidity, soft and comfortable, with bursts of tea aroma, as a whole is very fresh and clean. The taste is cool and thin.

Queen's Manor
Hot hand coffee: nutty aroma, tasting with rich creamy peanut flavor, sucrose sweetness is very obvious. It tastes full, too.
Iced hand coffee: the aroma is not obvious, with slightly sour fruit, sugar-like sweetness and chocolate finish. The overall cleanliness is high, but the taste is thinner than the hot one.
Golden Manning
Hot hand coffee: the aroma of caramel chocolate, taste rich and mellow, chocolate and spice flavor, finish rhyme caramel sweet feeling is obvious.
Iced hand Coffee: roasted nut aroma, the whole is a chocolate, herbal, nut flavor, clean and simple flavor. Manning's mellow taste is not reflected in the ice rush.

Generally speaking, the flavor expression of hot hand brewing coffee is more abundant and comprehensive. This is why Qianjie Coffee generally recommends guests to taste hot individual coffee. Although the overall flavor of iced hand brewed coffee is lighter than that of hot hand brewed coffee, and the acidity is more obvious, some coffee beans are also very delicious, especially in this hot summer day, a good cup of iced hand brewed coffee will be more popular.
But not all coffee beans are made with ice hands that are delicious. For example, the mellow coffee represented by Mantenin tastes very good when it is hot, but when it is made with ice hands, the flavor is greatly reduced.
Of course, there are some coffee beans that make iced coffee very good, such as last year's Ethiopian TOH washing champion bean inflorescence, which is used to make iced coffee with a flavor similar to that of honey grapefruit tea. Qianjie also recommends the use of some specially processed coffee beans with outstanding flavor to make iced coffee, such as Honduras Shirley and Columbia Rose Valley. This kind of coffee beans use ice hand flushing method to still maintain a good flavor, and cool and fresh.
