Although instant coffee is a godsend in baking because of its strong flavor, dry texture and solubility, most of us know that it does not taste as good as freshly ground coffee beans. Instant coffee is actually made from real coffee. The whole coffee bean is roasted, ground and brewed before it begins to become an instant coffee bean. What makes coffee instant is when all the water is removed from the brewing product, leaving dehydrated coffee crystals. To make coffee again, you only need to add water.

There are two ways to make instant coffee: spray drying and freeze drying. Spray drying is achieved by spraying liquid coffee concentrate into very hot dry air (we mean 480 degrees Fahrenheit) in the form of mist. When the coffee touches the ground, the water has evaporated and dried into small, round crystals.

Freeze-dried coffee involves several steps. First, brew the coffee into an extract. Coffee extract cools into coffee paste at about 20 degrees Fahrenheit. Then cool the mashed coffee further to-40 degrees Fahrenheit on a belt, roller or tray until coffee ice is formed. The coffee ice was broken into particles. They are then sent to a dry vacuum, where the ice evaporates and leaves instant coffee particles.
