What kind of coffee do you have? Similarities and differences between Colombian Strawberry-flavored Coffee Bean, Cherry Blossom and Moon Night
Have you ever had strawberry coffee? Many people are shocked by its outstanding fruity flavor when they come into contact with strawberry coffee for the first time. We all know that there are many flavors in coffee. Believe it or not, the flavor in coffee is not limited to fruit and flowers. Coffee is a plant, and like all plants, it has many sources of flavor. The main factors are as follows:
Soil composition-nutritious soil is more likely to produce more delicious coffee than weakly nutritious soil. The more nutrients the coffee plant gets, the healthier it becomes, and the coffee cherries bring more flavor to the coffee beans inside.
Climate-weather patterns, including humidity, rain and wind, help plants know when to blossom, produce cherries or go dormant. When the climate gets out of control and causes plants to produce cherries too early or too late, the coffee is not so delicious.
Altitude-High-altitude coffee usually has brighter acidity than low-altitude coffee. Our brains often interpret this brightness as fruity and brittleness.
Harvest-cherries picked before ripening tend to produce "green" (bad) coffee. Cherries picked when overripe tend to ferment the coffee (bad again). Carefully selected cherries are balanced, energetic and delicious.
Processing-controlled processing helps to bring a balanced flavor. In particular, the natural process produces a fruity flavor because coffee beans are dried in cherries for days or even weeks, absorbing the sugary fruit flavor.
Roasting-Coffee roasted in a mild to moderate range usually has a fruity flavor. However, if you roast it deeper, the fruit will rot and become bitter and carbon. Since ultra-deep roasting was the previous standard for boutique coffee, no wonder fruity coffee looks so novel and strange.
Fruity is not just a taste developed by coffee lovers to make coffee more exotic or exotic.
I'd like to share with you two kinds of strawberry-flavored coffee beans in Qianjie Coffee. They are Flower Moon Night and Cherry Blossom. Both of these coffees are from Colombia. Although they both belong to Colombia, first of all, the two beans belong to different producing areas. Cherry blossoms come from Paradise Manor in Cauca Province, and Flower Night Moon comes from Estogatine Farm in Huilan producing area.
In the treatment method, the cherry blossoms are washed with double anaerobic enzymes, so the acidity is more obvious, and the flower and moon nights are treated with anaerobic sun treatment, which is more concentrated and balanced as a whole.
On beans, cherry blossoms belong to Castiao, while Huayue Night is Kaddura. With regard to these two beans, there is a perception in the coffee industry that Caturra and other traditional Latin American varieties "tend to produce strong but traditional-flavored cups that may be impressive but not prominent", making it difficult for growers to succeed through quality-based differentiation strategies based on these varieties. Perhaps the most important contribution of Colombian sensory tests to the ongoing dialogue about coffee breeding and cup quality is the discovery that Castillo can produce a good cup of coffee and sometimes extraordinary coffee, as Castillo samples have been certified with a score of 90 or higher.
In front of the street, the two beans are medium-baked, and the overall flavor of Flower Moon Night is strawberry, floral and slightly fermented wine. Cherry blossoms tend to have strawberry jam, floral aromas, soft acidity and some spicy tea flavors.
