Coffee producing area
Cymbidium Province of Colombia is located in southern Colombia at the confluence of the central and eastern mountains of the Andes. The coffee growing area of Huilan is centered on Pitalito. The coffee is planted at an altitude of 1750-1950m and is mainly planted by small farmers. In the past ten years, small coffee farmers have made concerted efforts, and after manual harvesting and careful treatment, the coffee fruit has finally become a boutique coffee bean that can show the flavor of Huilan producing area. A number of coffee beans from the Huilan area were tested in the front street. They all have aromas such as nutty caramel and soft sweet and sour berries.

Montblanc Manor
Montblanc Manor (Finca Montblanco) is located on the winding mountain road of Velida La Tocola in Pitalito. The coffee estate run by the landowner Rodrigo Sanchez Valencia traces its coffee cultivation to his grandfather. Montblanc Manor is located on the top of the hill, with a land area of about 18 hectares. The manor is rich in water resources and perfect washing equipment and drying equipment, so most of the coffee beans produced in the manor are washed, including the special treatment derived from the washing method.

Coffee variety
The rosy summer coffee beans that Qianjie bought this time are made from a mixture of Rosa, Kaddura and Kaduai. When you see this, some friends will wonder if this bean is still a single coffee bean. Washing treatment method
The garden owner first floated the picked fruit to remove the underdensity / rotten coffee fruit and sand and gravel from the branches. The peel and pulp are then removed by machine, and the peeled fruit is put into a fermentation tank for 18-36 hours in order to remove the pectin layer through the acid produced by fermentation. The fermented coffee fruit will be washed and finally sun-dried to reduce the moisture content of coffee beans to about 11%. Sun-dried coffee beans will be stored with parchment and will not be peeled off until they are exported.

Qianjie baking suggestion
Due to the high water content of the new season beans, the bakers in the front street will prolong the dehydration time in the baking process so that the bean surface and core are heated evenly. In order to show the sweetness, acidity and rich aroma of this bean, it is baked in a medium-light degree.
