Montblanc Manor

Montblanc Manor is located on the winding mountain road of Velida La Tocola in Pitalito, the coffee estate run by the estate RodrigoSanchez Valencia, whose coffee is grown in the lake after his grandfather. Located on the top of a hilly hill, TeBlanc Manor covers an area of about 18 hectares and is equipped with wet mills and dryers to handle coffee beans independently. In 2002, Rodrigo participated in a local coffee training program, which teaches children of local coffee growers about cup testing. Before that, he and his family had never considered the knowledge of coffee flavor. By learning to distinguish the flavor of coffee, he and his father and grandfather were able to establish a connection between the farming techniques they used and the properties of coffee produced in cup tests. at the same time, Rodrigo also began to learn about cup tests, through which Rodrigo learned about the poor quality of coffee between plots within his estate. He realized that after his estate won the cup test contest for a year, he did not continue to get a good place, so he decided to study how to consistently produce quality coffee. This prompted him to explore the trees planted in Montblanc Village, where he discovered the varieties his grandfather planted in the 1980s. It was at this time that Zidula was noticed and distinguished.

Coffee variety

Coffee treatment-washing

The garden owner first floated the picked fruit to remove the underdensity / rotten coffee fruit and branch sand. The peel and pulp are then removed by machine, and the peeled fruit is put into a fermentation tank for 18-3 hours in order to remove the pectin layer through the acid produced by fermentation. The fermented coffee fruit will be washed and finally dried in the sun to reduce the moisture content of coffee beans to about 11%. Sun-dried coffee beans will be stored with parchment and will not be peeled off until they are exported.
