Clifton Manor, one of the Tropical Rain Forest Alliance certified estates, is the oldest manor in Jamaica. Clifton Manor's Blue Mountain production dates back to the mid-18th century (roughly around 1750) and was handled by the current master, the Sharp family, in 1978. Clifton Manor relies on the scenic Clifton Hills, the coffee planting and raw bean processing fields fall at an average of 4300 feet (1310.64 meters), sufficient altitude, daytime mist, plenty of sunshine, rainfall, and mineral-rich planting soil, provide good growth conditions for coffee trees and delay the ripening time of coffee cherries, giving the fruit plenty of time to form more aromatic compounds. Coffee grows on rugged hillsides and is very difficult to pick. During the spring harvest season, the Sharp family arranges skilled workers to go up the mountain to harvest coffee fruits with the right maturity.
After the Sharp family took over Clifton Manor, it began with the transformation of the wild jungle on the farm, followed by the introduction of various treatment equipment and investment in solar power plants, sewage treatment plants and BMCP treatment plants. As the only coffee farm with the logo of "tropical rain forest", every link of the park adheres to the concept of environmental protection. The raw bean treatment water is used for agricultural irrigation, and the peel is fermented into organic fertilizer for flower culture.
Treatment of blue mountain coffee beans
Clifton Manor puts the harvested fresh fruit in a pool, uses flotation to separate ripe and immature beans, and then uses the water in the conveyor belt to send ripe coffee cherries into and peel off. Then put the coffee beans with mucus and amniotic membrane into the pool to ferment, after mucus fermentation, use the agitation of water to remove the mucus residue, and then dry the clean coffee beans with amniotic membrane, reach a certain moisture content of 11-12%, and then send them to the BMCP treatment plant for one month. This step is for the ripening of coffee flavor and the stability of internal structure and water activity.
The so-called classic Blue Mountain flavor, with strong chocolate, baked nuts and other aromas, soft acidity and mellow taste. For the brewing of coffee, Qianjie has always believed that the freshness of coffee beans is an important link that affects the flavor of coffee. The coffee beans shipped in Qianjie are all roasted within 5 days, because Qianjie is well aware that the freshness of coffee beans has a great impact on the flavor. The purpose of Qianjie roasting is "freshly roasted coffee", so that every guest who places an order is the freshest coffee when he receives it. The bean cultivation period of coffee is about 4-7 days, so when the guest gets it, it is the time when the flavor is the best.

Because in the process of transportation, the pressure caused by carbon dioxide in the package can also make the coffee flavor mellow, so the coffee powder can be brewed as soon as it is received. But the coffee powder needs to be brewed in time, because the coffee powder oxidizes more quickly after contact with the air, that is to say, the flavor of the coffee will dissipate more quickly, so the flavor of the coffee is not so good. Therefore, Qianjie suggests buying whole beans, grinding and flushing now, so that we can better taste the flavor of coffee.

Put 15g coffee powder into the water in the sharing pot at the same time, steam with 30g water for 30s, then start injecting water around the center with small water flow for 30s, until 125g begins to segment, wait until the coffee powder layer drops to half the position of the filter cup and start to inject the second stage with the same method, until 225g, and then the filter cup can be removed after all the dripping is completed.
