Introduction of flavor washing and solarization in Ethiopia Yega Xuefei Coffee Bean hand flushing area
Yega Xuefei, which is synonymous with Ethiopian boutique coffee, believes that even a person who does not drink coffee very often will never be able to refuse its charm. This is also the reason why the list of hand-made coffee in major boutique cafes must not be lacking. It tastes light, fresh and bright, and its shallow roasting gives full play to the fragrance of lemon, flowers and fruit acid, making it one of the first choices for entry-level drinks.
Yega Xuefei is actually a small town in Ethiopia. It is famous for its mode of production and flavor. It has also become the most famous coffee producing area in Africa. There are many ways to treat coffee. The most common treatment is the sun and water washing.
About the sun
It is a very ancient treatment method, which is mainly used in most countries with low rainfall. The drying process lasts about four weeks. Its cost is low, but the disadvantage is that the quality of the fruit is not always good, mainly affected by the climate. Beans are stored in the pulp to absorb nutrients in the drying process, so that the sweetness and alcohol thickness are higher than other treatment methods. At present, the sun treatment method is considered to be the most environmentally friendly treatment method. The opposite disadvantage is that the sour taste is relatively low.
About washing
Water washing is the most popular treatment method at present. The beans after washing have good appearance, clean taste and good quality. Most of the floating beans can be removed by machine, which is different from the method of removing defective beans by naked eyes in the sun. This method is more scientific and effective, and then after pool fermentation, the coffee beans reflect their own flavor, although the drying process will take one to three weeks again. But it is more able to produce high-quality coffee beans, which is why washing is becoming more and more popular today.
The disadvantage is that although more prominent fruit flavor can be obtained, the degree of water consumption makes it difficult for some water-deficient areas to bear.
About the G1 and G2 of Yega Xuefei
Coffee beans are divided into G1-G10 in the form of cup test according to SCAA evaluation standard (Gambiq grade cup score).
Before 2009, the washing quality of Yega Xuefei is G1 G2. The sun quality of Yega Xuefei can only be G3 G4 G5.
Until October 2009, Ethiopia launched the new grading system of the Ethiopian Commodity Exchange (Ethiopia Commodity Exchange, referred to as ECX). As long as the sun beans were evaluated by ECX cup testers, high-quality sun beans can also be crowned with Grade1 and Grade2!
The biggest difference is the number of defective beans, such as G1 defective beans, 0 ~ 3 G2 defective beans, 412 G2 defective beans, and how much flavor is extracted.
