How much water and ice do you need for iced American coffee? The proportion course of American Coffee
First take out a large ice cup from the refrigerator, fill it with three pieces of ice, pour water until it is eight minutes full, extract and pour into it, and a cup of iced American coffee is finished. This is the production process after Qianjie barista receives an order for iced American coffee.
The purpose of adding ice and water to the espresso liquid is to dilute the concentration and make the coffee taste better. Since the concentration is adjusted, what should be the ratio of concentrate to water? Is there a particular ratio of water to ice in iced American coffee?
Ratio of water to water
In fact, the concentration ratio of American dilution with water depends on the flavor of beans. For example, the flavor of nut chocolate flavor of medium-and deep-roasted beans, because the flavor of espresso will be bitter and strong, it is recommended to take a larger proportion of dilution concentration, can be used to 1:6 to 1:8 liquid-to-water ratio, like stronger can use 1:6, like lighter can use 1:8.
If the use of relatively shallow baked beans, the flavor performance is no longer a simple bitter, but also sour, sweet and other flavor, then the dilution ratio does not have to pull too large, can be used around 1:5 ratio adjustment.
For example, Qianjie store used sunflower warm sun mixed beans as an example, in order to highlight the flavor of Shirley barrel, chose 20 grams of powder, 27 to 28 seconds to extract 40 grams of coffee liquid extraction scheme. When determining the ratio of thermoAmerican concentration, we continue to use this parameter to extract. After several rounds of testing, it was finally decided to use 1VR 4.5 dilution (180 grams of water). In this ratio, it can better highlight the flavor of warm and sunny wine, vanilla and cream, and the taste is also very smooth.
So when you choose the American dilution scheme, you might as well determine the flavor of the beans to express, and then try to mix with a few more proportions, and finally compare to get your favorite American proportion.
The ratio of ice to water
In the past, the product of Street Ice American Coffee was taken as an example. today, the extraction scheme for sunflower beans is to use 19.7 grams of coffee powder, extract 38 grams of coffee liquid in 29 seconds, add 90 grams of ice, 160 grams of water, the ratio of coffee to ice water is 1: 6.5, and the ratio of ice to water is 1: 1.7.
According to the observation of Qianjie, there will be a lot of crushed ice left in the cup after many guests finish drinking. This is because Qianjie uses large chunks of old ice that have been frozen for at least two or three days, and ice cups that have been frozen in advance, the ice melts slowly, and a few small pieces of ice can still be seen about 15 minutes after production.
It seems that the coffee concentration is diluted low, but in the actual drinking will not affect the taste of coffee flavor, and can always maintain the cold state of iced American coffee (warm sun room temperature drinking experience is not good). So in our daily production of iced American coffee, we also need to combine the melting speed of the ice cubes we use in the coffee to customize the ratio of water to ice in our ice beauty.
If your ice cube is a smaller grain of new ice, it is recommended to increase the ice ratio appropriately, for example, the ice-water ratio on the front street is 1. 7, then you can increase it to 1:1. For example, extract a 40g concentrate and mix it with 100 grams of water and 100 grams of new ice to dilute the ice water, while keeping the coffee at a low temperature and ensuring the drinking experience.
If your ice cubes are also homemade chunks of old ice, then you can refer to the ice-water ratio of 1.7in front street, so that you can put less ice, so as to avoid melting too slowly, so as to avoid being too thick at the entrance, and finally fine-tune it according to your own taste to find your favorite proportional concentration.
Of course, there is a wide range of people's preference for American concentration, some people like to drink concentrate directly, some people like to add a little bit of milk, some people like pure iced American coffee, and so on. Therefore, there is no fixed standard for American taste preference, but we still need to try a lot according to the taste of beans and their eating habits, and find out which proportion they like best is the charm of coffee.
