Reading some books and articles written by Japanese baristas and European and American baristas, there is often a strong breath in the face: the author's dedication to the coffee industry and his love for running coffee shops. On the other hand, there is a shortage of high-quality coffee books in China, and there are plenty of coffee books on the shelves, but there are too many cobbled together "editors" and too few original "monographs," so there are very few people who can feel that wonderful breath.

In fact, running a cafe is like experiencing life. The most important thing is to have fun in it. Sweetness is a pleasure, and so is a short period of pain. There is too much pressure in this world, the concrete forest, the majestic material desire, the survival of the jungle, gender discrimination, profound workplace, bloody politics, some people choose to escape, some people choose to endure, opening a coffee shop is an "unusual road" for very few people. As a new way of life, it is destined to belong to only a small number of people. Shop owners rely on their own efforts and hard work to create an unknown future, nurture a certain interpersonal circle by their own temperament and hobbies, and decorate the city with their own wisdom and personality. everything is happy between chance and necessity.

By March 2010, the various types of students trained by our Pulan Coffee Institute have set up cafes, bars, teahouses and western restaurants across the country (some of them are just store managers rather than owners, and no one gives us awards. Let's put it this way). A reporter from China Daily asked us, who runs the best cafe? What do they have in common? This question is difficult to answer, but the coffee shops that do the best are often the operators who find the pleasure of running the business and enjoy it. On the contrary, they are burdened by things, and even eat unwillingly and can't sleep at night. Even if they make money, what can they do?

Tonight is preparing the production details of "lunch with Cisco", hehe.
