How to Use a Siphon Coffee Maker Step by Step
Making coffee with a siphon (or vacuum) pot isn’t just about the theatrics — it’s a precise, full-immersion brew method that highlights clarity, aroma, and body. But if you’ve ever struggled with getting the coffee to draw down properly, timing your brew, or avoiding sour or overly bitter results, you’re not alone. This guide breaks down every step with exact numbers so you can brew like a pro.
To make one cup of siphon coffee, use 1.5 scoops of coffee grounds. For each additional cup, add one more scoop. Total brew time is 60 seconds after mixing, with three specific stir sequences timed at 0, 30, and post-flame-off seconds.
What Is a Siphon Coffee Maker?
A siphon coffee maker — also called a vacuum pot — uses vapor pressure and vacuum suction to brew coffee through full immersion. It consists of two glass chambers: a lower bulb that holds water and an upper chamber where ground coffee brews. Heat applied to the lower chamber forces water upward into the upper chamber. When the heat is removed, brewed coffee filters back down through a cloth filter, leaving grounds behind. The result is a clean, aromatic, and often vibrant cup.

How the Siphon Brewing Process Works

The brewing process relies on heating water to create vapor pressure, pushing hot water into the upper chamber where it mixes with coffee grounds. After a set brew time, removing the heat source causes a vacuum effect that pulls the brewed coffee back down into the lower chamber through a filter. This full-immersion method emphasizes clarity and balance, similar to French press but with a cleaner cup due to the paper-like filtration of the cloth filter.
Step-by-Step: How to Brew Coffee with a Siphon Pot
1. Add Hot Water to the Lower Chamber
Pour hot water into the bottom bulb of the siphon. While the exact starting temperature isn’t specified, using pre-heated water helps speed up the process and maintain control. Ensure the water level is appropriate for the number of cups you're brewing.

2. Clean the Outer Glass Surface
Use a dry cloth to wipe down the outer surface of the glass. Make sure there are no water droplets left on the glass, as they can affect visibility or cause discomfort during handling.

3. Attach the Filter to the Upper Chamber
Hook the bottom of the siphon filter — typically a cloth or metal filter — onto the hook located inside the bottom of the upper chamber. Ensure it’s securely attached to prevent coffee grounds from passing through.

4. Insert the Upper Chamber
Holding the chain, place the upper chamber into the lower chamber, but do not insert it straight down immediately. Angle it slightly as shown in the guide to help with proper brewing flow later.

5. Heat with Alcohol Lamp
Pour 95% liquid alcohol into the lamp and position it under the lower chamber, slightly off-center. Light the lamp to begin heating the water. Do not place the lamp directly in the middle.

6. Wait for Bubbles and Insert Upper Chamber Fully
When you see many bubbles forming — indicating the water is close to boiling — upright the upper chamber fully into the lower one. This allows the vapor pressure to push water up into the brewing chamber.

7. Add Coffee Grounds
Once the water rises into the upper chamber, add coffee grounds immediately. Use 1.5 scoops of coffee for one cup. Add one additional scoop for each extra cup. That means for two cups, use 2.5 scoops; for three, use 3.5 scoops, and so on.

8. Start the Timer at First Contact
As soon as the coffee grounds and hot water meet, start your timer. This marks the beginning of the 60-second total brew period.
9. Stir Three Times During Brew
Perform three separate stirring actions:

- First stir: right after adding coffee grounds (timing starts now)
- Second stir: at around 30 seconds into the brew
- Third stir: immediately after turning off the heat
Each stir should last no longer than 3 seconds. Over-stirring can lead to over-extraction and a more acidic cup.

10. Turn Off Heat at 60 Seconds
When the sandglass (or timer) indicates 60 seconds have passed, turn off the alcohol lamp. This halts the heating and initiates the draw-down process.

11. Perform Final Stir
Right after turning off the heat, do one last stir to help with even extraction and to encourage the coffee to begin descending.
12. Wipe the Lower Chamber to Speed Draw-Down
Use a cloth that is about 80–90% dry to gently wipe the bottom of the lower chamber. This helps create a better vacuum seal and encourages the brewed coffee to draw back down more quickly through the filter.

13. Observe the Results
A properly brewed siphon coffee will leave a small “mountain” of coffee grounds in the upper chamber and visible crema-like oils on the brewed coffee in the lower bulb. These are signs of a successful brew.

14. Remove the Upper Chamber
To take out the upper chamber, don’t pull it straight up. Instead, gently rotate it back and forth until it loosens, then lift it off carefully.

15. Serve the Coffee
Pour the brewed coffee into pre-warmed cups. Your siphon coffee is now ready to drink.
