Then put the fried coffee beans into a stone mortar and mash them. It is said that only in this way can the fragrance be pure. To make coffee, use a small copper spoon with a long handle called "Jeffzer". First put a tablespoon of coffee and the right amount of sugar in the copper spoon, then add cold water and simmer over the charcoal fire to make the coffee and sugar completely dissolve. However, espresso is brewed by a high-pressure machine and can be made in more than 20 seconds. Therefore, in the eyes of the Turks, the Italian bubble method is an unfashionable fast food coffee. However, in recent years, restaurants in metropolitan areas such as Istanbul have rushed to introduce Italian concentrated cooking and American whirlpool cooking, gradually abandoning Turkey's traditional bubble method.
Generally speaking, the attack on espresso drinks is mostly from the older generation of Turks, but there is also a special group called the Association for Modern Life, which claims to be a 10,000-year-old member, to join the boycott. Traditional German-Turkish cafes are hard to find in metropolitan areas, but they are still popular in rural towns. This may have something to do with the fact that Turkish-style cafes are men-only and dilapidated, which are not competitive in urban areas.
