She invented the coffee follicle method more than 100 years ago, rewriting the history of coffee drinking in Germany and the world. Before this invention, people used cloth bags to filter coffee grounds. However, the cloth filter bag is troublesome to clean, and the other is unsanitary after repeated use. The coffee grounds remaining in the gap of the bag are easy to destroy the original taste of coffee. On June 20, 1908, Melita registered her invention at the Royal Patent Office: a copper coffee filter cup with an arched bottom perforated with a water outlet, which was the world's first follicular coffee cup. Melita Benz founded Melita Inc. in her residence on a small budget and registered her signature Melitta as a trademark.
Like siphon coffee, with the rise of fine coffee culture, hand-brewed coffee also ushered in a new spring. This ancient way of brewing coffee miraculously took root and blossomed in the eastern land, especially in Japan, South Korea, China Taiwan and inland areas. Especially since the 1950s, Japanese people have almost become obsessed with coffee brewing. Follicular and drip coffee filter cups of various materials emerge one after another. A complete set of hand-brewed follicular coffee theory and operation technology has been established, which has been loved by more and more people. It is really the proverb of "the west is not bright and the east is bright".
◆ This time we use HARIO V60 three-person sharing pot and filter cup to make two-person coffee, the usual ratio of powder to coffee solution is 1:12~15, that is, 10 grams of coffee powder out of 120~150ml coffee solution (usually sharing pot will be marked 100ml, 200ml, etc.).
◆ Coffee powder thickness is about sugar thickness, and the thickness is more uniform.
Equipment required: Hand rinse pot, sharing pot and filter cup, filter paper, bean grinder, thermometer, gram scale
About the grinder: It is recommended that friends who like to drink freshly ground coffee invest in a reliable grinder, whether electric or hand-cranked, which is much better than buying coffee powder and the price of general household is not very high.
About the hand-washing pot: the hand-washing pot is diverse, different brands, different materials, different styles, different prices are dazzling. It seems that it is not easy to choose a suitable hand-washing pot among many hand-washing pots, which requires everyone to do more homework to understand different hand-washing pots. It is best to try it yourself to choose your own suitable "God pot". Recommended here are Japanese brands KALITA, HARIO, Taguchi, Yuetu, etc. Of course, the price is relatively high, and the domestic ones are TIAMO, Zhenghuangxing, etc. The price is relatively cheap, but I once said that coffee things as long as they are not deceptive, they are mostly a penny, so everyone chooses according to their actual situation. Here we choose HARIO 1.2L stainless steel hand rinse pot, which is also the most common hand rinse pot in the international barista competition.
About sharing pot and filter cup: The choice of sharing pot and filter cup is also various, sharing pot is mostly transparent glass material, easy to observe the amount of coffee, filter cup is different, like hand washing pot, we do not repeat, everyone chooses, here we choose HARIO V60 01 ceramic filter cup.
Operation steps:
1. Filter paper:
Take out a fan filter paper, one side of which is pressed by the machine, and its edge is thicker. (Filter paper selection: filter paper size model, according to the selection of filter cup selection, but also divided into bleached and pulp filter paper, bleached filter paper pulp smell less, we choose bleached filter paper)
Fold the thickest side and flatten it
Open the filter paper and align the two centerlines. Press gently. (Don't press the two sectors into a fold line!)
Place the folded filter paper in the filter cup

Weigh coffee beans: Weigh coffee beans 20g(there is a saying that one cup of coffee with 10g, two cups can be 15g or less than 20g on the line, in fact, is not in line with the extraction principle, if you want to get a light taste of coffee can be reduced, but make two cups of coffee and coffee beans can be reduced is not correct, players can try, taste difference is really big)
3. Grinding: Hand grinder grinds coffee beans
4. Heating water: It is best to use a thermometer to measure the water temperature to make the water temperature accurate. The water temperature range of hand flushing is relatively large. 83~95 can be used. However, the taste of different water temperatures is definitely very different. Different beans need different water temperatures for different baking degrees. Players need to adjust themselves to find the most suitable water temperature.
5. Wet filter paper: wash hot water evenly on the filter paper, make the filter paper all wet, stick to the filter cup tightly, and then pour out the hot water in the sharing pot. (Many people are not used to wet filter paper and think it is unnecessary. In fact, the biggest function of wet filter paper is three: 1. Rinse the impurities washi smell of filter paper 2. Make filter paper stick on filter cup 3. Warm filter cup and sharing pot)
6. Pour the ground coffee into the filter cup and pat gently.
7. Steaming:
Evenly pour about 1.5 times the amount of coffee powder (be sure to pour thoroughly, but not too much water in the sharing pot)
There is no fixed time for stewing. Fresh coffee powder will start to absorb water and expand after filling with water. When all coffee powder absorbs water, the expansion stops and the stewing process stops. At this time, water can be injected. (Whether or not the expansion or the size of the expansion has a lot to do with the roasting degree and freshness of the coffee. The fresher the coffee powder, the greater the expansion. The deeper the roasting, the greater the expansion.)
8. Water injection: Novice to do hand to uniform, do not deliberately pursue what red law, as long as uniform will not drink, it is recommended to start from the middle point of water injection, and then draw concentric circles along a direction to the periphery, but do not rush to the filter paper, and then draw concentric circles until the center so repeated on it, the water flow to maintain stability, water injection can be divided into two or three times, the middle points are not divided into segments Many players have disputes, as for the taste of what different aesthetics did not drink, so do not elaborate here, Players can try it themselves.
9. Complete the extraction: extraction is over, get about 240ml coffee solution, end the water injection, remove the filter cup, share the pot is our delicious coffee.
10. Enjoy coffee: pour coffee from the sharing pot into a warm coffee cup and enjoy a cup of warm, delicious coffee.
