Traditional coffee is usually shipped to the consumer country, an adventurous journey that sometimes takes months, exposing the coffee to very hot and humid cabins, which gives it a different flavor, known as aged coffee.

The aging process reduces the acidity and increases the viscosity of coffee beans. Aged coffee beans last longer than seasonal coffee beans or mature coffee beans (stored for two or three years). More recently, some Indonesian coffees, such as Indonesian monsoon coffee, have been deliberately exposed to humid, salty air to accelerate ripening.
