However, as a well-known domestic expert in oil and plant protein, Wang Xingguo gave his attitude from a professional point of view that drinking coffee and coffee partner is safe, no problem.
Some experts do not really understand oil processing, but launched the "hydrogenated oil = trans fatty acid". Wang Xingguo said: "hydrogenated oil is the oil from which vegetable oil has been hydrogenated." According to the degree of hydrogenation, hydrogenated vegetable oils can be divided into two categories: partially hydrogenated oil and extreme hydrogenated oil. Partially hydrogenated oils are partially hydrogenated and often contain a certain amount of trans fatty acids, with an average of about 20%. Extremely hydrogenated oil is a fully hydrogenated product, also known as hardened oil or fully hydrogenated oil, which contains very low trans fatty acids, generally less than 1%. As a result, foods labeled 'hydrogenated oil' but actually hardened oil actually contain no or very little trans fatty acids. "
Wang Xingguo said that the coffee companion usually refers to the plant fat powder or cream as a coffee flavoring agent, which uses starch hydrolysate, hydrogenated oil and casein as the main raw materials and adopts a manufacturing process similar to milk powder. the fat content of oil products prepared by blending, emulsification, sterilization and spray drying varies greatly, generally between 7% and 20%. Extremely hydrogenated coconut oil or palm kernel oil is often used, in which the content of trans fatty acids is very low. Plant fat powder or milk essence does not contain milk ingredients, the price is only about half of milk powder, can still avoid deterioration without cold storage, easy to use and can prolong the shelf life, so it is widely used.
Sometimes, we also use fresh milk and milk powder to taste our coffee. In fact, there is no significant difference between coffee companion and milk in terms of improving taste. Wang Xingguo said frankly: "most people drink coffee and partner not to get the nutrients in milk, so in this sense, coffee partner is a successful product." However, compared with milk and milk powder, coffee companions are low in protein and high in fat, which is not in line with the health pursuit of modern people. With its low cost, it has acted as dairy products in the name of 'cream' from the beginning, which is more or less misleading to consumers. "
He also said that although coffee companions are "non-milk" products, they do contain milk because casein is the main protein in milk. In recent years, as the price of casein has soared, coffee partner producers have sought cheaper alternatives. At present, coffee companions produced with soy protein have entered the market and become veritable "non-dairy" products.
Authorities such as the World Health Organization believe that eating 2 grams of trans fatty acids a day has no significant impact on human health, so a certain amount of trans fatty acids is allowed in food. Wang Xingguo said: "because coffee partners often use extremely hydrogenated coconut oil or palm kernel oil as the formula, the content of trans fatty acids is so low that the trans fatty acids provided by coffee partners in the daily diet of Chinese people can even be ignored."
Nevertheless, the reporter believes that for people who have become accustomed to the taste of coffee partners, there is no need to refuse coffee partners for fear of trans fatty acids. But from a healthier point of view, it's good to drink black coffee, or add fresh milk if you can.
