According to centuries-old experience, when coffee is brewed-the temperature of the water, the pressure, the time the coffee powder and water are in contact-are important factors affecting the quality of coffee. Here are a few common methods:
Turkish Lbrik Coffee:
It is a concentrated, strong coffee with a slight aroma. Total contact time approximately 1 minute, pressure 1 atmosphere.

The boiling water at 100℃ seeps into the coffee powder in the filter and drips into the cup (as shown in the figure). The contact time between the boiling water and the coffee powder is between 2 and 4 minutes. Napoletana coffee is not very thick, but it tastes full and smooth.
Espresso machine brewing:
Coffee is an extremely unstable liquid and can change its properties at once. This is one of the reasons why the espresso machine was invented. Espresso machines can extract several cups of coffee in succession. The high pressure in the brewing process can dissolve the oil and colloid in the coffee beans, and the essence of the beans is completely extracted by the pressure, making the brewed coffee stronger, taste and aroma better.
Siphon:
Put the coffee powder into the funnel above, add water into the pot, then put the funnel nozzle tightly into the pot mouth, and boil the water. When the boiling water rises into the funnel, stir and soak for about 40 seconds to one minute, then turn off the alcohol lamp. At this point, coffee drops back into the pot, and then you can remove the funnel and pour it out for drinking.
Coffee lovers know that buying good coffee is only the first step in making good coffee. Proper storage, grinding and brewing of coffee can ensure the quality of coffee.
When brewing coffee, pay attention to the following points
1. Boiling will make coffee bitter, so do not boil coffee, the appropriate brewing temperature should be slightly lower than 96℃.
2. Coffee can not be reheated, brewing should be careful to cook only the amount needed each time, and it is best to drink it when it is just cooked. The best drinking temperature for coffee is 85 ° C.
3. Water accounts for 98% of a cup of coffee, so it is best to use filtered water to brew coffee, especially water containing chlorine.
4. Don't reuse coffee grounds. Brewed coffee grounds leave only an unpleasant bitter taste.
5. Grind coffee correctly depending on the coffee maker you are using. Too fine a grind can make coffee bitter and clog the coffee maker more easily. If the coffee is ground too coarsely, the coffee will have no taste. For filter-type brewing, properly ground coffee powder should be dripped for 2 to 4 minutes each time.
