The study, led by Australia Commonwealth University psychology lecturer George Van Dorn, conducted two experiments to see if the color of the coffee cup affected consumers 'perception of latte taste. In the experiment, participants were asked to drink coffee from white, clear and blue coffee cups and recorded their perception of the bitter taste of coffee.
The results showed that the color of the coffee cup greatly affected the participants 'judgment of coffee taste: subjects who used white coffee cups experienced lower sweetness and stronger bitterness than clear and blue coffee cups. Blue coffee cups, however, enhanced both bitterness and sweetness, leading participants to believe coffee was stronger.
Dorn said: "Our research confirms that the color of the coffee cup can really affect the sensory experience of coffee,""the significance of this result is that cafes, baristas and even pottery manufacturers should face this problem, perhaps the color of the cup can affect consumers to become frequent customers or not to return."
Color affects taste, blue helps lose weight
According to the Medical Daily, there have been several previous studies that suggest that judgments about food quality may be influenced by the characteristics of food containers. A 2013 paper published in the Journal of Sensory Studies examined the question of what color cup hot chocolate tastes better. The results showed that despite the fact that the sweetness and aroma of hot drinks did not change with the color of the cup, subjects did believe that cream-colored cups increased the sweetness and aroma of hot chocolate.
