The most popular method of making Coffee in the Coffee Age
Hand-brewed coffee is the "third wave", that is, the most popular way of brewing coffee in the era of Honggou Coffee. Whether it is the way it is made or the style of coffee, it is worthy of further study and exploration. For this popular way of brewing coffee in the world, we should be grateful to Bentz Melitta, a German housewife. She invented the coffee bubble method more than 100 years ago, rewriting the history of drinking coffee in Germany and the whole country. Before this discovery, people used cloth bags to filter coffee grounds. However, the cloth filter bag is poor in cleaning, and it is unsanitary after frequent use, and the coffee grounds left in the loophole in the cloth bag simply break the original mellow taste of good coffee. On June 20, 1908, Melita registered her invention with the Royal Patent Office: a copper coffee filter cup with a water outlet at the bottom, the first follicular coffee cup in the country. Melita Benz now uses a small amount of money to set up the "Melita Company" in her home, and uses her own signature Melitta as the registered trademark of the product.
Different from siphon coffee, hand-brewed coffee has ushered in a new autumn with the rise of good coffee culture. this pedantic method of brewing coffee has miraculously taken root and blossomed in the oriental land. especially with Japan, South Korea, Taiwan and the boundary to obtain the unprecedented prosperity, the rising sun rises, quite for this day oneself originated from the 1950s, the opponent brewed coffee almost to the obsessive field. There are a large number of filter cup utensils of various materials, which have established a whole set of practical and monopolistic skills of hand-brewed coffee, and have gained the preference of more and more people, which is really in line with the proverb that "the west is not bright and the east is bright".
☆ this time we use the HARIO V60 three-person sharing pot and filter cup to produce coffee for two. The usual ratio of powder to coffee liquid is 1: 12: 15, which means 10 grams of coffee powder produces 120~150ml coffee liquid (usually the city marks 100ml, 200ml, etc.) on the sharing pot.
The thickness of ☆ coffee powder is about the thickness of sugar, and the thickness is flat.

Need equipment: hand pot, sharing pot and filter cup, filter paper, bean grinder, thermometer, gram about bean grinder: it is suggested that friends who drink freshly ground coffee in a relationship should invest in a solid quality bean grinder, whether electric or hand-operated, it is much better than buying coffee powder, and the price of household use is not very high.
For hand-punching pots: there are many kinds of hand-flushing pots, and the gap brands, different materials, substandard bureaus, and unqualified prices make people dazzled and messy in the vast number of hands to decide on a proper hand-punch pot as if it is not an easy task. It is urgent for everyone to do more homework to understand the gap. The hand-punch pot has the best chance to try it in person to determine its own suitable "magic pot". Recommended here are Japanese brands KALITA, HARIO, Taguchi, Moon Rabbit, etc., of course, the price is also relatively high, domestic TIAMO, Zhengzheng line and other prices are absolutely high, but I have already said that coffee is only not deceptive, it may be a penny, so each person chooses according to his own actual situation. Here we choose HARIO 1.2L stainless steel hand punching pot, which is also the most common hand punching pot in the domestic barista competition.
For sharing pots and filter cups: there are also a variety of choices between sharing pots and filter cups. Most of the sharing pots are made of clear glass, so it is easy to observe the amount of coffee, and the filter cup is different, just like the hand pot, we do not repeat it, everyone decides on their own, here we decide HARIO V6001 ceramic filter cup.
Operation steps:
1. Folding filter paper:
Take out a fan-shaped filter paper, one side of which is mechanically pressed by the process, and its edge is thicker. (the choice of filter paper: the filter paper is divided into size and type, according to the filter cup of choice, the bleached filter paper is also divided into the bleached filter paper and the raw pulp filter paper, the pulp flavor of the bleached filter paper is less, we choose the bleached filter paper)

Fold the thickest side and flatten it.

Open the filter paper to align the two centerlines and press it slightly. Do not press the two fan faces into a broken line!
Put the folded filter paper in the filter cup
two。 Weigh coffee beans: 20g coffee beans (there is a saying that you can use 10g for one cup and two cups, so 15g may be a little less than 20g, which is indeed not reasonable. If you want to get coffee with a light appetite, you can reduce the amount of coffee. But it is incorrect to make two cups of coffee and coffee beans can be reduced. Players can take tests by themselves, and there is really a big difference in mouth and stomach.)
3. Grinder: hand grinder grinds coffee beans
4. Heating water: it is best to use a thermometer to measure the water temperature to make the water temperature rough. The water temperature range of hand flushing can be as large as 83-95. However, the taste of the difference in water temperature is also very different. The baking degree of different beans usually requires different water temperature, so players need to mediate themselves to find their most appropriate water.
6. Pour the ground coffee powder into the filter cup and gently pat flat.
7. Stew and steam
8. Evenly pour water on coffee powder about 1.5 times the number of coffee powder (be sure to pour thoroughly, but don't drop too much water in the sharing pot)

There is no time for stewing to rest. Fresh coffee powder can absorb water and expand as soon as it is filled with water. When all coffee powder absorbs water, the steaming process ends, and then the steaming process ends, then it can be irrigated. (whether it is compressed or not or the size of shrinkage has a lot to do with the roasting degree and freshness level of coffee. The fresher the coffee powder is, the more compact it is, and the deeper the roasting is, the greater the expansion is.)
8. Irrigation: the veteran hand flush with symmetry is important, there is no need to decide what kind of punch to seek, only if it is flat, it will not be bad to drink, first propose to split the face and inject water from the middle point, and then draw a concentric circle along a left side to the periphery, but do not rush to the filter paper, and then draw a concentric circle until the periphery is so frequent, the current should persist in shaking, irrigation can be divided into two or three times, and many players have disputes over the two ends. As for the taste of what gap aesthetics did not drink, so do not elaborate here, players can test.

10. Enjoy the coffee: pour the coffee from the sharing pot into a warm coffee cup and you can enjoy a cup of warm and delicious coffee.

Coffee extraction Coffee essence Coffee Cooking is classified into five categories
Following the war between water and coffee powder, coffee cooking is classified into five categories: steaming, pressurization, gravity, leaching, and ice brewing. The easiest way to brew is to put the coffee powder in the cup and put it in hot water. As it cools, the coffee powder will sink to the bottom of the cup. This is an old method, and it is still used in some parts of Indonesia today. Learn from it and don't eat it.
