The temperature of the upper pot is about 84-92 degrees (depending on when you cover the upper pot), try to keep the water in the upper pot at 85 degrees, and then add coffee powder.
Special tips: coffee powder for siphon pot grinding thickness and hand flush similar, that is, coarse granulated sugar particle size, or slightly fine, reference grinding fineness, small eagle type of grinder, reference value in 3.5)
After adding the coffee powder, you need to stir it. After the coffee powder is fully soaked, it will form a thick layer of grease, like a lid, covering the coffee in the upper pot, thus causing the water temperature to rise. As you stir, you can clearly see that the original thick fat layer becomes thinner and thinner, and these fats dissolve in the coffee, making the coffee more mellow. As for how long the coffee should be brewed in the upper pot, this is another experience value, depending on your judgment of the beans, the judgment of the water temperature, and then decisively stop the brewing process, generally between 1 minute and 2 minutes.
When you want to stop brewing, remove the heat source, and then you will use the cold damp cloth prepared in advance, cover the joint of the upper and lower pots with a damp cloth, let the temperature of the lower pot drop, and quickly suck the coffee in the upper pot back into the lower pot through siphon action.
All the coffee flows into the lower pot.
