Yunnan small Katim Coffee Bean characteristics, Flavor and taste introduction to the ranking of Coffee producing areas in Yunnan, China
Yunnan coffee, China
Coffee is a kind of plant that requires a high growth environment. It needs sufficient sunshine and rainfall in tropical and subtropical areas without Frosts Descent. At present, the main growing areas in China are Yunnan and Hainan. The geographical environment of Yunnan is very suitable for the planting of coffee trees. As the Chinese have no habit of drinking coffee since ancient times, coffee has really become popular in China in recent years. However, the history of coffee cultivation in Yunnan, China can be traced back to the last century.
In 1904, the French missionary Tian Deneng introduced and planted the first coffee tree in Yunnan, which began the history of coffee cultivation in Yunnan. The large-scale cultivation of coffee in Yunnan mainly began in 1952, when the scientists and technicians of the National Provincial Academy of Agricultural Sciences distributed 80kg coffee seeds to farmers in Lujiangba, Baoshan, and began to plant coffee on a large scale, which has been planted for nearly 70 years.
With the continuous development of the instant coffee market, Nestl é set up a joint venture in China in 1988 to start a coffee planting project and began a coffee trial in Pu'er, Yunnan Province. Nestle Coffee Company has successively set up the Ministry of Agriculture to guide farmers on how to improve coffee varieties and planting, and will buy output according to the spot market prices in the United States at that time. Nestl é's move is here to promote Yunnan's coffee industry, and today, Yunnan's coffee development has occupied a dominant position in China.
Coffee producing area
Coffee growing areas in Yunnan are mainly distributed in the southwest of the province, including Baoshan, Pu'er, Dehong, Lincang and Xishuangbanna.
Pu'er, the largest coffee planting base in Yunnan, has unique soil conditions for planting coffee trees. There is a lot of nutritious red soil, abundant water resources and a large area of sunny gentle slopes. Coupled with the subtropical mountain humid monsoon climate, low latitude, monsoon and plateau climate three major characteristics, forming a large temperature difference between day and night, warm in winter and cool in summer, which are favorable factors for the growth of coffee trees. Among Yunnan coffee, the most famous "Simao small seed Coffee" in Pu'er City, namely "Pu'er Coffee".
"strong but not bitter, fragrant but not strong, mellow aroma; rich in oil, rich in acidity, long-lasting; this is the top grade of coffee." This is the evaluation of Baoshan small-grain coffee cup by coffee experts at home and abroad. Lujiangba in Baoshan is a unique dry-hot valley climate in Yunnan Province, with an annual average temperature of 21.3℃ and frosting on the mountains, which is very suitable for planting Arabica varieties.
Lincang, named after its proximity to the Lancang River, is located in the southwest of Yunnan and bordered by Myanmar in the west. The terrain here is complex, with an altitude of more than 1000 meters, and the annual average temperature is 17.3 degrees Celsius. There is no distinct four seasons of spring, summer, autumn and winter, but is divided into dry season and rainy season. June is the beginning of the rainy season every year, lasting 3-4 months, with a large temperature difference between day and night. Therefore, it is very suitable for the cultivation of coffee, a high-altitude tropical plant. Qianjie also has its own coffee farm in Lincang, planting an elegant variety of tin cards, that is, Qianjie 2013.

Yunnan small Katim Coffee
The Yunnan small-grain coffee we are talking about is actually Arabica varieties. In the initial stage of the development of the coffee industry, we mainly planted iron pickup and bourbon varieties. Because the disease resistance of iron pickup is weak and the yield is not high, Yunnan began to introduce Katim varieties. Now most of Yunnan accounts for the cultivation of Katim.
Katim is a hybrid of Timor timor and Kaddura caturra, developed by Portugal in 1959. Because of inheriting the Robusta gene, having high tolerance to berry disease and leaf rust, high yield, rapid ripening of coffee fruit and the advantage of intensive planting, farmers also prefer to plant.
Katim, which is planted at an altitude of more than 1200 meters, is obviously not as good as Kaddura, Bourbon, iron pickup and other varieties. However, with the improvement of planting management and coffee raw bean processing technology in Yunnan, high-quality batches of Katim also have a good performance in the international coffee market, and the aroma of nuts, black tea and plum-like sweet and sour feeling are more and more popular among the public.

With the continuous progress of Yunnan coffee, people are looking forward to Yunnan boutique coffee. Qianjie believes that coffee novices can start from understanding the basic flavor of Yunnan producing areas. Qianjie launched seven rations beans from different countries and producing areas. Entry-level players can start with the lowest price, taste the flavor of the coffee producing areas, and then choose different boutique coffee according to their own taste.
Cooking flavor
In the selection of coffee beans, Qianjie recommends freshly roasted coffee, because the flavor described by the merchant in the packaging is based on the cup test comparison of freshly roasted coffee. If the baking time is too long, that is, the best taste period has passed, the aroma will be difficult to restore. The coffee on the front street is freshly baked within 5 days, so it can be brewed as soon as it is received.
Qianjie believes that the flavor of Yunnan small-grain coffee should be balanced, that is, it should not be too sour and bitter. Therefore, the use of V60 filter cup, with medium-fine grinding degree and not too high water temperature for cooking.
Filter cup: V60
Water temperature: 90 degrees Celsius
Grinding degree: the screening rate of No. 20 standard screen is 80%.
Ratio of powder to water: 1:15
Amount of powder: 15g
With three-stage extraction, grind the coffee and pour it into the filter paper, pour 30g water into the center and steam for 30 seconds, pay attention to the smooth circle of the small flow from the inside to the outside, inject 95g water in the second stage, and start injecting 100g in the third stage when the coffee liquid is almost finished. take the filter cup until all the coffee has been filtered. The time is about 2 minutes, with an error of about 10 seconds.
Small Katim Coffee has dry aromas of nuts and berries. you can taste the sweetness of nuts, herbs, chocolate and brown sugar, balanced acidity of plums and a hint of acidity in the finish.
